Italian Pasta Classics - Spaghetti with Shrimp, Lemon, Mint & Pecorino

Mint, lemon and chili together are a very classic Italian flavor combination. They also happen to work deliciously together with seafood. This incredibly easy and company-worthy Pasta dish is an excellent choice if you are looking for an entree that is zesty, light and comforting all at once. At well under 30 minutes to prepare (if you get the Shrimp cleaned in advance) it's also doable on a weeknight. I know Spaghetti with Shrimp, Lemon, Mint and Pecorino is definitely going to be a regular on our summer menu rotation. Try it today and buon appetito!

Spaghetti with Shrimp, Lemon, Mint & Pecorino
Serves 3 as an entree (or 4 lightly)
Lightly Adapted from Food & Wine

Ingredients:
1/4 lightly toasted Pine Nuts
1/2 Pound Spaghetti 
1/4 Cup Extra Virgin Olive Oil 
2 Garlic Cloves, halved
1/2 Pound Large Wild Shrimp, shelled, cleaned and cut in thirds (buy them cleaned to save time!) 
Kosher Salt
Pepper
Zest of one Lemon
1 Tablespoon Lemon Juice
1/4 Cup Chopped Mint, plus small leaves set aside for garnish
1 Cup grated Pecorino Romano
1 teaspoon jarred Calabrian Chili (we like Tutto Calabria) or substitute Crushed Red Pepper


Method: 
Prepare Pasta as directed in well-salted water. Reserve 1/2 Cup Pasta water, drain and set the Pasta aside. 

Meanwhile in a large skillet, warm 2 Tablespoons of the Olive Oil over medium low heat and add the Garlic Cloves. Cook, stirring until slightly golden, for about 5 minutes. Discard the Garlic. 

Sprinkle Shrimp with a little Salt and Pepper. Add them to the skillet and cook about 2 minutes until almost totally opaque. 

Add the Pasta, Water, Lemon Zest, Lemon Juice, 2/3 of the Pecorino Cheese, and the 2 remaining Tablespoons of Extra Virgin Olive Oil. Cook, tossing constantly until the sauce thickens nicely, about 2 minutes. Season with a bit more salt and stir in the Calabrian Chili.

Plate and garnish with remaining Pecorino, toasted Pine Nuts and Mint Leaves. Enjoy!

Celebrating Dad - Sweet & Savory Watermelon Wedges

Considering how important good dads are to our lives, it's kind of crazy that we only set aside one day a year to honor them. Plus they're so easy to please. Dad enjoys the simple things: a burger, a beer, some time to putter around the lawn or tap at golf balls, even just a few hours to watch sports all by himself. Let him do these things and he's a happy guy.

It was only fitting that our easy-to-achieve Father's Day Barbecue began with the world's easiest summer appetizer, Savory Chili Lime Watermelon Wedges. How many summer starters can be ready in under five minutes? Before we share the ever so simple recipe,

Now, for your new go-to summer app, I give you this fresh spin on a barbecue favorite- a savory, sweet, tart and a little spicy slice of in-season Watermelon.

Sweet & Savory Chile Lime Watermelon Wedges
Serves About 10

Ingredients:
1 Small to Medium very ripe Watermelon (preferably seedless variety)
Zest of 4 Limes
Ancho Chile Powder 
Sea Salt 
Optional Cilantro for garnish

Method:
Slice Watermelon into wedged sized as you desire

Lay on a flat surface and sprinkle liberally with Lime Zest. Next sprinkle lightly with Ancho Chile Powder. 

Slice one of the Limes and squeeze a few drops of juice over the Watermelon Wedges
Sprinkle a bit of Sea Salt all over and serve chilled. Garnish with Lime Wedges and optional Cilantro.

Insta-Famous: Shredded Pork Shoulder & Black Bean Chili

Instagram, like Pinterest, is a fabulous destination when I'm looking for recipe inspiration or just my daily dose of food porn (usually when I'm hungry). I was reminded of its sheer suggestive power just last week when a photo of the delicious Pork Chili my husband spent most of the day preparing (by that I mean slow cooking a huge Pork Shoulder) was reposted by our favorite hot sauce company - El Yucateco.  In just minutes, it had close to 100 likes. As for El Yucateco Hot Sauce, it's true, we are addicted, and just can't get enough of their Green Habanero flavor. That's why it was a no-brainer to enhance an already fantastic Chili - the perfect food for football Sunday

We had to buy a larger Pork Shoulder than the recipe called for, so we cooked the leftover low and slow and used it to make Tacos and then Pulled Pork Sandwiches! It takes a while to make, but it's almost all inactive time and the results are so worth it. Enjoy and see you on Instagram

In Season: Fava Beans - Gemelli With Fava & Frisee

Meatless Monday is here again and we are using it as an excuse to check out a seasonal specialty, the delicious Fava Bean. Also known as Broad Beans, Favas are a favorite in many corners of the world, but they are notably well loved by my ancestral people, the Italians. Since we often enjoy Meatless Monday with the help of vegetarian pasta preparations, it only seemed right that these herby, firm, green beans be served atop our favorite starch. We were very happy with the result - a garlicky, spicy and lemony mix of flavors that play off the more delicate Fava flavor. Gemelli Is a fun pasta shape with great texture, but any short, curly pasta will do.

Some folks describe prepping Favas as a labor of love. They aren't entirely wrong either. Favas are easy to handle but they definitely they take a little time and doing. Never seen a Fava before? Well they look like this when you buy them:

To prepare, pop the Fava Beans out of their pods (as pictured below) and blanch them in boiling water for 30 seconds. Drain Beans immediately

under cold water. Taking each individual bean in your hand, carefully slit the waxy outer skin and pop the inside of it out, trying to keep the interior bright green bean whole. Discard the waxy layer. 


Alternately you can actually eat the waxy outer skin, as it doesn't taste badly at all, but when I have the time, I prefer to unsheath the bright green inside, time consuming though it may be! 

It's also worth it to note that this dish tastes fantastic at room temperature and would make a great, innovative pasta salad for your next summer get-together if you so choose. 

Let's get down to the business of building today's satisfying meatless meal. 



Gemelli With Fava Beans & Frisee
Serves 4 

Ingredients: 
1 Pound Fava Bean Pods, shelled and waxy skin optionally removed (read above)
1 Pound Gemelli or other short, textured pasta
1 medium-sized, moderately spicy Red Chili, (or hot pepper or your choice) minced. (*I like to leave the seeds in but you can omit if you are spice averse)
2 large Cloves of minced Garlic

Zest of 1 Lemon
1 Tablespoon Lemon Juice
1 small head of Frisee Lettuce, chopped
15 Kalamata Olives, pitted and chopped 
2 Tablespoons Olive Oil, divided
1 Tablespoon Salted Butter
Salt 
Black Pepper
Grated Pecorino Romano Cheese

Method: 

1. Prep and chop all ingredients above. 

2. Meanwhile, set a pot of salted water to boil for the pasta. Prepare pasta according to package instructions. Once it is in the boiling water, begin step 3. 

3. In a large skillet over medium low flame, melt one Tablespoon of Butter with 1 Tablespoon Olive Oil. Add the Garlic and sauté 1 minute until fragrant. Add the Chili and sauté another minute. Add the chopped Frisee to the skillet and stir as it wilts a bit, just 2-3 minutes. Turn off the heat. 

4. Season the Frisee with a few turns of Black Pepper and about 3 generous pinches of Salt. Stir. Add the Lemon Zest and Lemon Juice to the Frisee and stir. 

5. By this time, your pasta should be close to done. When it is finish, drain it through a colander and add the Gemelli to the skillet with the Frisee. Sprinkle with chopped Olives and toss Pasta together gently with the vegetables, add add the remaining Tablespoon of Olive Oil. Taste for seasoning and add about 1/4 teaspoon of Salt if you feel it is needed.

6. To serve, plate pasta and sprinkle with Fava Beans and optional Pecorino Romano Cheese. Enjoy!

Test Kitchen Tuesday - Homemade Taco Seasoning!

Taco Night is a favorite around here, and tonight, we're making good old-fashioned Beef Tacos. Nope, they'll be no fancy sauces or exotic toppings, just cheese, lettuce, tomato, and a dollop of sour cream. But what can you do to lend some extra special flavor to a comfortable old favorite? The answer is simple - Homemade Taco Seasoning.

In today's Test Kitchen, we'll be trying out Alton Brown's Taco Potion #19
Potion... oooh, I like it. My dad named me after a TV witch (a cute and nice witch, mind you) so I guess it all makes sense. 

Alton's recipe is great because the spices required are pretty easy to find. In fact, I happened to have them all in my pantry. Finally, my spice hoarding pays off. 

The Results:
In just under 5 minutes, we were left with a batch of flavorful Taco Seasoning that will last a while. My Plan? Jar it up and be ready for our next lazy taco night. Idea: This mix, in a cute mini-mason jar, would make a great hostess gift or party favor. Super easy. 
Use this Taco Seasoning on any protein, even vegetarian meat substitutes. 

Flavor-wise, Taco Potion #19 is just plain good! It actually tastes like a much, much better version of the grocery store stuff in the little paper packets. As a bonus, we know exactly what's in it, as the recipe includes all ingredients that we can spell and of course, no creepy chemical additions. Also, the salinity is very balanced - it won't give you a sodium hangover. You could even use this blend as a jumping off point for your own proprietary Taco Potion. 

Upon seeing the results, my husband observed (seemingly to his dismay?) that unlike the store-bought version, this mix did not impart a bright orange coloring to our beef. "Good. Your food should not be artificially orange," I responded. "But what about about delicious Kraft Mac 'n Cheese?." My clever guy has a point! We'll look the other way on that guilty pleasure.

Alton Brown's Taco Potion #19

Yield: Approx 3 ounces - Makes enough for at least 8 servings of Tacos. Save the leftovers in an airtight jar for up to 1 month. 

Ingredients:
2 Tablespoons Chili Powder 
1 Tablespoon Ground Cumin
2 teaspoons Cornstarch
2 teaspoons Kosher Salt
1 1/2 teaspoons Hot Smoked Paprika 
1 teaspoon Ground Coriander
1/2 teaspoon Cayenne Pepper

Method: 
Mix to combine and store in an airtight container. 
Application:
To use your Taco Seasoning, add 1/4 cup of liquid to your pan of fully browned and cooked protein. You can opt for Water or better yet, Beer (thanks for my friend Marina for that idea). Stir in the Seasoning. Roughly 2 Tablespoons per pound of Protein will do, but you can use your judgment. Allow liquid to evaporate a bit and stir. Serve right away on your favorite taco!

Meatless Monday: Pasta + Zucchini, Lemon, Chili & Burrata

Welcome to Monday! 
Don't all jump up and down at once. 


But if we're looking on the bright side, I can report that some really good meatless meals have been materializing in our kitchen of late. 


At the height of summer, when produce is especially great, going meat-free gets that much easier. 



There's nothing like walking into a farm stand or market and being totally inspired by their fruits and vegetables. (With Tomatoes in season, our Tomato Carpaccio pictured here is a great place to start.) That very thing happened to me recently and resulted in what is today's meatless Dinner, a vegetarian pasta dish that I hope you will like as much as I do. 




~In our Lumachine with Zucchini, Lemon, Chili, & Burrata, market-fresh Zucchini gets a quick saute and then marinates for about 10 minutes in Lemon Zest and Juice, as well as spicy Red Chilies. Once tossed with short Pasta or your choice, the Zucchini mixture is enhanced with fresh ribbons of Basil and, here's the topper -  runny and impossibly delicious dollops of Burrata Cheese. 

The result is a bright, herbaceous and lemony dish with a spicy Chili twist cooled by the mellow, creamy cheese. If you can't find Burrata, a good Buffalo Mozzarella will stand in just fine, but don't miss trying Burrata at least once in your life. And don't sample it too much while you're cooking this meal because if you are anything like me, you'll eat it all and have none left for dinner. 

What makes this dish great? Today's Pasta will enthuse even the most reluctant veggie eaters, or at the very least, those that groan when meat is missing from their dinner (ahem, Husband...). I will even go out on a further limb and propose that perhaps if you sub in another short pasta in a fun shape (remember Wagon Wheels?) and omit the spicy Chilies, you may even ge able to coax your vegetable averse kids into eating this.

Let's get to it. 

Lumachine with Zucchini, Lemon, Chili and Burrata
Serves 4 as an appetizer, 3 as an entree

Ingredients:
Freshly Chopped Zucchini, Photo: NK 
2 Large Zucchini, well scrubbed. Cut in half lengthwise and sliced into thin half moons

2.5 Tablespoons Extra Virgin Olive Oil

3 large Garlic Cloves, lightly crushed

3 Small Dried Chilies (Such as Thai Bird Chilies), very finely chopped

Zest of 1 Large Lemon

1 Tablespoon Lemon Juice

8 Ounces Burrata Cheese, cut into 1 inch pieces (try for about 3 pieces per person)

1/2 teaspoon Kosher Salt (plus more for boiling Pasta)

1/4 teaspoon Black Pepper

5 Large Basil Leaves, cut into thin ribbons (chiffonade)

3/4 Pound Short Maccheroni such as Lumachine or other thimble-shaped Pasta

Method:
1. In a large skillet, heat Oil and Garlic Cloves over medium flame. Heat for about 3 minutes until Garlic becomes fragrant and begins to brown. Remove Garlic Cloves and discard.

2. Add sliced Zucchini to the skillet and cook, stirring often, for about 4 minutes. Turn off the flame and season with a 1/4 teaspoon Kosher Salt and an 1/8 teaspoon of Black Pepper. Next, add the chopped Red Chilies, Zest of 1 Lemon, and a Tablespoon of Lemon Juice. Stir. 

3. Carefully pour the contents of the skillet into a heatproof bowl, juices and all. Set aside for at least 10 minutes, stirring occasionally. The longer it sits, the better it will be. Reserve skillet for finishing the Pasta.   Note: You could stop right here and end up with a really nice Vegetable Antipasto. You can also make this entire pasta recipe ahead by following the directions up to this step and refrigerate the Zucchini Mixture up to 1 day. Bring to room temperature before using.

4. When ready to finish up the dish, boil your Pasta of choice in well-salted water according to the package directions. When Pasta is done, drain it well and pour it back into the large skillet over low heat. 

5. Toss the Zucchini Mixture with all its juices into the skillet. Stir to mix Pasta and Zucchini together. Add the ribbons of Basil and stir again. Taste for seasoning and adjust to your liking. 

6. Plate your Pasta and top each dish with 2-3 dollops of Burrata Cheese. Finish with an extra sprinkling of Black Pepper. Serve immediately and enjoy!
