Ingredient Spotlight - Mint Simple Syrup

The summer heat is on full blast and you are, no doubt, in need of some refreshment. At least that's how I felt when I decided to use the overflowing bounty of my herb garden to jazz up a cold glass of Iced Tea - one of the many simple pleasures of the season, I am sure you'll agree. 

If you've ever included Mint to your garden, you know that it is prolific, growing and spreading like a weed as it takes over everything in its immediate proximity. Looking for a practical way to capitalize on this abundance, I decided to find a Mint Simple Syrup Recipe. The process took just about 15 minutes (including washing and chopping the Mint) and the results were delicious - Simple Syrup can be used in Cocktails (the possibilities are really endless) and Mocktails and as you've probably guessed, it was an awesome way to add extra flavor and sweetness to home-brewed Iced Tea.

Cocktail Break - St. Pat's Guinness Bloody Mary

Erin go bragh and happy St. Pats! Today, I'm going to give you a recipe tip you won't soon forget. 

A recipe tip about cocktails...

A genius idea given to me by the barkeep at venerable Irish bar on the Upper West Side of Manhattan, the scene of more than a few good times with my best friend before life forced us to become "responsible adults." 

Something tells me we'll be back. And you know why? Because they make a great Bloody Mary, and the best Bloody Marys...

YES. Who knew you could improve on a Bloody Mary? The bartender are George Keeley did, that's who. 

They say Guinness is Good, but Guinness Bloody Mary's are definitely better. As a matter of fact, lots of things benefit from a good dose of stout - like this easy Beef Pot Pie


Even if you favor green drinks on St. Pat's be sure to give this recipe a try some time this year. 


Guinness Bloody Mary's Our Way

Yields 1 Cocktail

Tools:

1 short rocks glass
Toothpick or Cocktail Skewers

Ingredients: 


1.5 Ounces of Vodka
4 Ounces of Low Sodium Tomato Juice
1 teaspoon Horseradish 
2 Splashes Worcestershire
1 Lime Wedge for garnish and one for the mix
1 Lemon Round for garnish and lemon for the mix
3 Green Olives stuffed with Pimento
1 Celery Stalk
Seasoned Salt (Celery Salt or other flavored Salt Blend) 
4 Dashes of Tabasco 
1 Ounce of Guinness 
Salt and Pepper to taste 

Method: 


Rim your glass with some Lemon and dip it into Seasoned Salt. 
Fill a short glass 2/3 of the way with Tomato Juice, then add Vodka, Horseradish, Tabasco, Worcestershire and a good squeeze of lemon. Stir.

Thread three Olives onto a cocktail skewer and finish with a small Lime Wedge. Set aside. 

Add Ice and Stir. Pour on the Guinness. Taste and add additional Tabasco, Horseradish and Seasoned Salt or Pepper as you wish. 

Garnish with a Celery Stalk and the Olive skewer. Enjoy!!

Holiday Cheers - Sugar & Spice Old Fashioned

There's no place like home for the holidays, but the season is always a little more merry when toasted with an exceptional cocktail. And that's just what we had thanks to my husband's ingenuity. After only a few tries he came up with the perfect Old Fashioned with a little holiday flair thanks to notes of Cinnamon, Vanilla and a Brown Sugar rimmed glass. It was a wonderful way to kick off our 6th Annual Feast of the Seven Fishes

Sugar & Spice Old Fashioned
Makes 1 Drink

Ingredients:
Honey
Light Brown Sugar
1/2 teaspoon Sugar & Spice Simple Syrup (recipe & ingredients below) 
2 Ounces Bulleit Bourbon
3 Dashes of Bitters
Handful of Ice 
1 Wide Strip of Orange Zest
Club Soda 
1 Maraschino Cherry or Luxardo Cherry
1 Cinnamon Stick

Method:
Set out a plate with Light Brown Sugar spread on it. 
Rub the rim of the glass with Orange Zest, twist it in half and set it aside. 
Lightly rim half the glass with Honey and dip in the Sugar to rim.
Place Simple Syrup in the glass.
Add the Bourbon.
Add the Orange Peel. 
Add three dashes of bitters and a Tablespoon or two Club Soda.
Stir.
Taste. If you like it a bit more sweet you can add another 1/2 teaspoon Simple Syrup.
Drop in the Cherry and garnish with a Cinnamon Stick then serve!


Sugar & Spice Simple Syrup
Makes about a Half Cup

Ingredients
1/2 Cup Light Brown Sugar
1/2 Cup Water
3 Cinnamon Sticks
1/2 Teaspoon Vanilla Extract or 1 Split Vanilla Bean

Method:
Combine Water and Sugar in small sauce pan. Bring to a boil.  
Add Vanilla and Cinnamon Sticks.
Lower the heat and simmer for 10 minutes or so. Stores in the fridge for several days.

Sweet Days of Summer - Cucumber Margaritas & Fluke Crudo

Ever have a really fabulous weekend from start to finish? 


This past weekend was like that for me. 



Beautiful weather and wonderful scenery (we stayed at my family's home on Long Island) came together with a few fun activities, plenty of relaxation time and a nice meal. 


Let's not forget a drink or two.


The only thing I had to remember on Saturday morning was to begin steeping my Cucumber Infused Tequila for the next 24 hours so it would be ready for cocktail time.


Priorities, people! 



Next we attended the most lovely baptism for a dear friend's little girl. The ceremony was beautiful and the after party was great fun, not to mention beautifully styled:

It was a wonderful event!


Sunday was set aside for family time so naturally I wanted to plan a menu.

Since we were by the sea, I opted for a quick and classic fish meal.

We have so many seafood menus here on NK (like this, this and this). That's because seafood is my favorite food and when it comes to making a fast and elegant meal, nothing is better. All you need is a really trustworthy fishmonger and half the work is done. 

I decided to prepare a simple main of Red Snapper & Asparagus on the grill pan, preceded by an appetizer of Steamed Clams as well as a quick Local Fluke Crudo (what's quicker than raw?) inspired by Esca in NYC. 


Crudo actually means raw, and when the word follows the name of a fish, what you're about to eat is basically the equivalent of Italian Sashimi. As with many simple preparations, the key to Crudo is very high quality fish and accompanying ingredients (such as great Olive Oil and specialty Flaked Sea Salt). This article from NPR.com is where I found the inspiration for the below adaptation for Fluke Crudo. It is a great read!! 

Before you cook, you'll need to have Cocktail Hour. For that, we went for the simplest and most refreshing Margarita of them all - no Triple Sec needed! The Cucumber Margarita made with your own house-infused Cucumber Tequila - just let Cucumbers sit in Tequila for 24 hours and voila. Get the recipe on Food and Wine


Now, without further delay, here is our Fluke Crudo recipe. Truly delicious and as simple as it gets.

Fluke Crudo with Radish & Pepper

Lightly Adapted from David Pasternack /Esca  
Serves 4 as an appetizer

Ingredients:
4 Ounces of Radishes, cut into match sticks
1/2 Cup thinly sliced Cubanelle Peppers

8 Ounces very fresh Fluke filet, sliced in half lenghtwise and then again into 1/4 inch thick slices (cut against the grain)

2 Limes 
High Quality Extra Virgin Olive Oil 

Specialty Flaked Sea Salt (or other good quality coarse grained Salt. (we used French Grey Salt). 

Method: 
In a small bowl, toss the Radish Matchsticks and Sliced Peppers with the juice of half a Lime and a sprinkle of salt. 

Prepare each serving plate by squeezing about a teaspoon of lime juice on it. Place the slices of Fluke side by side or in a fan shape.

Top with equal portions of the Radish and Pepper mix. 


Drizzle each plate a few times with high quality Extra Virgin Olive Oil. 

Finish with a sprinkling of Salt and serve with a Lime Wedge. 

Serve right away and enjoy!

Welcome Weekend - Cocktail: The Gin Hound

You need a drink. And if you don't, we do. We recommend it be The Gin Hound.

Gin has been the alpha and the omega in the cocktail evolution of my life thus far. The first "real" cocktail I ever consistently enjoyed was the Gin and Tonic. They were my go-to whenever I was out on the town for quite a while. I'd sweeten them with a splash of grenadine, ending up with a more drinkable yet still seemingly adult version of a Gin Rickey. 

The next spirit to spark my fancy was also in the clear family - Vodka. Thus, my drink of choice became the Screwdriver. Goes down easy, right?  When a maturer palette allowed me to actually appreciate the taste of certain liquors, I moved to the browns, Whiskey, Bourbon and Scotch, specifically. This also also coincided with the popularity of Mad Men and a major return to classic cocktails like the Old Fashioned and Manhattan. Good times! 

These days, I've come full circle. I still like all the others but I've come to appreciate the clean, herbal qualities of Gin all over again. Though it may be at its best with only light embellishment - give me a Gin and Cucumber-based cocktail any day - Gin also does great when paired with big flavors like Grapefruit. There's no need to dispense with fruit-driven libations when the winter months roll around. Grapefruit just happens to be great right now. You may even want to cook with it. The Gin Hound

Yields 2 Cocktails
Ingredients: 
3/4 Cups fresh Squeezed Grapefruit Juice
1 Tablespoon fresh Lemon Juice
4 Ounces of Gin *we like Bombay Sapphire
1 Ounce Sweet Vermouth
Ice 

Method: 
Combine the Lemon and Grapefruit juices. Fill a shaker with Ice and add the Gin, Vermouth and Juice. Shake well and serve on the rocks. We like to garnish ours with a wedge of Grapefruit. Cheers!
