Veggies: Haute to Homestyle - Mushroom "Bacon" BLTs & Zucchini Crudo with French Feta

Sure, it happens to be Meatless Monday, but today's post is just an everyday celebration of vegetables and all the wonders they possess.

"Vegetarian" the cuisine, not just the lifestyle, has really caught on, and that, as they say, is a good thing. From enterprising chefs to the everyday cook, so many are on board with the idea that vegetables, when treated right, can hold all the delicious appeal and decadence of an omnivore plate.

HAUTE: 

Today's Zucchini Crudo is a great option if you are looking for an elegant yet exciting veggie side. It's packed with flavor thanks to Lemon Juice and Zest, super spicy Thai Chilies, and fresh Mint. A sprinkling of French Feta chunks (French Feta is milder than Greek Feta) add some nice, round saltiness and cool the spiciness of those Thai Chilies. 




Be sure to allow this dish to marinate about a half hour to an hour before serving. It looks pretty stunning on the plate and tastes amazing if you like big bold flavors on your Vegetables.

Zucchini Crudo with Chili, Lemon, Mint and French Feta

Serves 3-4 as a small salad or side 

Ingredients:
1 to 1.5 Large Zucchini, sliced into very thin ribbons on a mandoline (about 20 slices)

1/8 Cup Extra Virgin Olive Oil

1 or 2 Small Thai Chilies (depending on your spice tolerance), minced.

Zest of 1 Lemon

2 teaspoons Lemon Juice

7 Mint Leaves, finely minced + a few sprigs for garnish 

1/8 teaspoon Sea Salt

Black Pepper to taste

4 Ounces French Feta, cut into small cubes

1. Lay the Zucchini Ribbons In a leak-proof container with a top. 

2. In a small bowl, combine Oil, Chilies, Lemon Zest, Lemon Juice, and minced Mint Leaves. Stir in the Salt and Pepper. Pour the dressing over the Zucchini Ribbons and seal the lid. Shake well in several directions until all Ribbons are coated. Allow to sit a half hour to an hour. 

3. When ready to serve, arrange about 5 slices of Zucchini in small bundles across each plate. Drizzle with any leftover dressing from the container. Scatter with French Feta and garnish with extra Mint Sprigs. Enjoy! 


HOMESTYLE:
Our yummy and vegetarian friendly BLT adapted from a clever recipe in the latest Food & Wine is super satisfying. We changed up the Richard Landau's ingenious original recipe just a bit by using more accessible Portobello Mushroom Caps instead of King Oyster Mushrooms. Also, I got the idea to spike my faux "Bacon Mushrooms" with a healthy pinch of Spanish Hot Smoked Paprika to achieve something a bit more like smokey Bacon flavor. In a final tweak, I created a Dill Mayo (I love the brightness of Dill) rather than the (I'm sure delicious) Basil Mayo that Landau employs. 

Tip- Real Bacon is salty so don't skimp on the Salt in this recipe. It makes the flavors come alive. 

Portobello Mushroom Vegetarian "BLT" With Dil Mayonnaise
Adapted from Chef Richard Landau of Vedge in Philadelphia/As published in Food & Wine
Serves 2

Ingredients:
4 Slices Country White Bread, toasted

2 Tablespoons Olive Oil

1 large and very ripe Beefsteak Tomato, sliced into rounds

1.5 - 2 Large Portobello Mushroom Caps, very thinly sliced

1/4 Light Mayonnaise (or Vegan Mayo if you prefer)

1 heaping Tablespoon finely chopped Dill, plus sprigs for garnish

1/2 teaspoon Hot Smoked Spanish Paprika

Sea Salt & Freshly Ground Pepper

4 Leaves Specialty Lettuce - we prefer Red Oak Leaf Lettuce


Method: 
1. Combine Mayonnaise and finely chopped Dill in a small bowl and set aside. 

2. In a very large skillet or grill pan, heat 2 Tablespoons Olive Oil over medium heat until shimmering. Swirl to coat. Lay the Portobello Mushrooms into the pan in a single layer in the pan. Keep in mind they will shrink considerably. Allow Mushrooms to cook about 5 minutes until very golden.  Flip the Mushrooms to the other side and cook another 4 minutes. Remove to paper towel to drain off oil.

3. Immediately sprinkle the mushrooms with Salt and Pepper to taste, and finish by sprinkling all over with the Hot Smoked Spanish Paprika.  

4. To assemble Sandwiches, spread 2 slices of toasted Bread with the Mayonnaise/Dill Mixture. Top each with as many Tomato slices as you like (we went with two thick slices per sandwich). Sprinkle the Tomatoes with a good pinch of Salt. Add the even amounts of the Mushroom Slices and then top with two slices of Lettuce per sandwich. Top the Sandwich with the other bread halves. Garnish with Dill Sprigs, serve and enjoy!

See? Two delicious dishes - no meat needed! My husband, the original "Bacon Boy" as we call him, ate this sandwich with no complaints. I know he'd prefer Bacon but I told him that he too must suffer for my art. We hope you enjoy these meat-free dishes that go from everyday to elegant in a snap.

Out of Their Shells - Crab: Two Ways

This past week I was all about Shellfish. That's not so out of the ordinary for me - I'm wild about the stuff. Especially once the warm weather hits, my thoughts turn to Crab Boils and Clam Bakes.  For me, Shellfish is just feel-good food - light, simple, and perfect for laid back summer meals with family, friends, and plenty of laughs.  

My craving ended up being perfectly timed since we spontaneously decided to head out to Montauk this weekend. Montauk is a charming seaside town at the tip of Long Island's South Fork.

It was a wonderful day. The air was clear, the sea was bright, and the fish we ate was so fresh it practically wiggled on the plate. Since I am partial to the crustaceans and bivalves of the world, I made sure to eat one of each of the following (not all in one day!): a Lobster Roll, Fried Clam Bellies from The Clam Bar in Napeague, and finally, a tasty dish of my all time fave, Linguine with White Clam Sauce at Edgewater Restaurant (check out NK's version HERE). While this was decidedly not a diet weekend, I regret none of my food choices. And even better, I was able to spend time with some very special people - my mom and my husband. We also linked up with two of our dear friends who happen to live in the area. Friends make me happy, family makes me happy, Shellfish makes me happy - and I want to share it all with you, so here goes -   

Baked Mini Crab Cakes with Homemade Mustard Sauce

Open-Faced Crab Sandwiches with Mango and Pickled Green Tomatoes

Prior to this weekend, my most recent seafood craving was for Crab, so me and my husband consequently whipped up the two dishes I'll be sharing today. The first is a super easy and impressive cocktail bite - Mini Crab Cakes with Homemade Mustard Sauce:

The recipe is surprisingly quick and the result is both delicious and really hard to mess up. A mini muffin tin allows you to skip the messy process of forming and frying up Crab Cakes, and makes it easy to turn out a large amount of appetizers in a few easy steps.  Whip these up for a cocktail party or as a light appetizer and you'll be everyone's best friend. A dollop of homemade Mustard Sauce gives these little savory cakes a tangy bite, and fresh chives add both to the taste and presentation. We like to use Back Fin Crab Meat. It comes pasteurized in the can and is cheaper than Lump Crab yet is still extremely flavorful.

Makes 20-24 Mini Crab Cakes 

Ingredients:
1 Mini Muffin Tin - ideally enough for 24 muffins

8 Ounces  Fat Free Cream Cheese, softened
3/4 Cup finely grated Parmigiana Cheese
1 Egg
1/4 Cup Fat Free Sour Cream
1 Tablespoon finely grated Orange Peel
1/2 teaspoon finely grated Lemon Peel
4 Tablespoons finely chopped Fresh Chives
+
4 Whole Chives Cut into centimeter long lengths (for the garnish)

6 Ounces Back Fin Crab Meat (usually comes in 1 LB cans if Pasteurized Crab Meat)

1/4 teaspoon Kosher Salt
1 large pinch Cayenne Pepper
1 large pinch Hot Smoked Spanish Paprika
1.25 Cups Panko Breadcrumbs
3/4 Stick Salted Butter, melted, plus more for greasing pan

Method:
Generously grease muffin tin with with some Butter.
Preheat oven to 350.
Mix up the Homemade Mustard Sauce if using.* Recipe follows. 

Using an electric beater, beat Cream Cheese in a medium-sized bowl until smooth. Add 1/4 Cup of the Parmigiana Cheese and the Egg. Beat until combined, Add the Sour Cream, Orange and Lemon Peels, and 2 Tablespoons Chopped Chives. Add the Kosher Salt, Cayenne Pepper and Smoked Paprika. Beat again. Fold in the Crabmeat. This step can be done up to a day ahead and refrigerated. 

In a bowl, toss Panko Breadcrumbs, remaining 1/2 cup Parmigiana Cheese, and the remaining 2 Tablespoons chopped Chives. Drizzle the Melted Butter over the mixture, tossing gradually until evenly moistened. 

Press 1 rounded Tablespoon of the Panko mixture into the bottom of each muffin cup. Press a teaspoon into the cups to help form a crust. You can also do this with your fingers. Some Panko Mixture should be left over. 

Next, spoon 1 heaping Tablespoon Crab Mixture into each cup. To finish, sprinkle about a teaspoon of Panko Mixture over each muffin cup. 

Bake Crab Cakes until golden brown on the top and fully set. This should take 30 minutes. 

When cooked, cool pan for 5 minutes and run a knife around the edge of each muffin cup to loosen the Crab Cakes. Gently lift them out of the pan and transfer to the serving dish. 

As much as an hour before you are ready to serve Crab Cakes, dot each with a small amount of Easy Mustard Sauce* and garnish with centimeter long slices of Chives arranged in a crisscross shape as pictured above. Serve immediately.  

Easy Mustard Sauce*
Makes enough to dot 24 Crab Cake Hors D'oeuvres 

2 Heaping Tablespoons Low-Fat Mayonnaise
1 Heaping teaspoon Dijon Mustard
1/2 teaspoon Dry Mustard Powder, optional
2 Drops Tabasco Sauce or to taste
1/4 teaspoon Worcestershire Sauce

~Mix ingredients together and refrigerate until ready to use. 

What to do with any leftover Crab? 
Easy - our Open-Faced Crab Sandwich on thick toasty Bread is a quick, delicious and inspired dinner Sandwich the next day. Pickled Green Tomatoes and ripe Mango create an interesting sweet/salty dimension, and a few drops of Hot Sauce ties it all together with a kick.

Serves 2

Ingredients: 
8-10 Ounces Back Fin Crab Meat
4 Slices Thick White Sandwich Bread or Brioche, toasted

1 Large Scallion, white and green parts chopped
1/2 Ripe Mango, cut into centimeter cubes
1/2 Small Cucumber, peeled and cubed
1 Pickled Green Tomato, cut into centimeter cubes
2 Tablespoons roughly chopped Cilantro
1/2 teaspoon Canola or Vegetable Oil
1/2 teaspoon Lime Juice 
Pinch Salt 

1/2 a Lime, cut in quarter wedges 

For the Mayonnaise
1.5 Tablespoons Low Fat Mayonnaise
1/2 teaspoon Lime Juice
1 large pinch Salt
Several turns freshly ground Black Pepper
3 Drops Tabasco Sauce

Method:
In a bowl, combine Scallion, Mango, Cucumber, Pickled Green Tomato, and Cilantro. Drizzle with Oil, 1/2 teaspoon Lime Juice, and add a Pinch of Salt. Mix to combine. 

In a small bowl, combine the Mayonnaise, Lime Juice, a pinch of Salt, a generous sprinkle of Black Pepper, and a few drops Tabasco. Mix. Gently fold the Mayonnaise mixture into the Crab Meat in a larger bowl. 

To serve, set two pieces of Toast on each plate. Spoon equal portions of the Crab mixture on each piece of Toast. Top with the Mango and Green Tomato Mixture. Sprinkle Generously with Pepper and optionally garnish with an extra slice of Mango. Serve with Lime Wedges for squeezing. Enjoy!

Meatless Monday - Grilled Cheese and Ramp Pesto Sandwiches

I recently learned that April 12 was National Grilled Cheese Day "here in the land of fake holidays," as Gothamist so cleverly noted. Well, then! Far be it from me to let such a momentous occasion pass unnoticed. 

As luck would have it, I'd already been looking for more ways to utilize my leftover Ramp Pesto, and incorporating it into one of the more sinful yet comforting sandwiches known to man seemed like a smashing idea.

Turns out, our bright green Ramp Pesto with its bold, garlicky flavor and hints of Walnut and Parmigiana was the perfect foil to a gooey melange of mild Gruyere and tangy Asiago Cheeses. Diet this sandwich is not, but it is indeed a worthy way to interpret Grilled Cheese - or as I like to call it, the best thing since Sliced Bread.

Makes 2 Sandwiches

Ingredients:
4  Slices Texas Toast of thick Brioche
1/4 Cup Ramp Pesto (Click HERE for Recipe)
1/4 Pound room temp Gruyere, grated
1/4 Pound room temp Asiago, thinly sliced
2 Tablespoons Salted Butter


Method:
Heat a large skillet over medium-low flame.

Place 4 slices of Bread on skillet and dot each with a 1/2 Tablespoon Butter. Wait until the Butter begins to melt and spread it with a knife around the Bread. Check bottoms of the Bread. Flip once it has become light golden brown.

Allow the other side of Bread to toast for a few minutes. Add an even mix of Gruyere and Asiago to two of the four Bread slices. 

Pull the remaining two Bread slices off the skillet and set aside. Continue to cook until Cheeses begin to melt. To help the Cheese melt faster, it's a good idea to lay the top of a pot over them to trap in the heat. I like to use a glass pot cover so I can see the progress.  

Meanwhile, spread the plain Bread Slices with an ample amount of Ramp Pesto.

Once the cheese has melted about 3/4 of the way through, place the Pesto slathered Bread slices on top of each of the two Cheese slices. 

Flip the Sandwiches again and press down on them lightly to fuse Sandwiches together. 

Continue to cook until Cheese is melted to your liking. Slice Sandwiches down the middle, serve, and enjoy!

Lunch is Served - Buffalo Chicken & Maytag Blue Cheese Melts

Today's hearty lunch recipe is an excellent example of how just one very special ingredient can really amp up a dish. In this case, a modest portion of fresh Maytag Blue Cheese takes the ubiquitous Buffalo Chicken Sandwich to new heights. 

Our easy Pulled Chicken Sandwich offers all the tangy Buffalo Sauce flavor you crave, and makes for a great casual lunch or even dinner option. Homemade Buffalo Sauce allows you to adjust the flavor to your taste.  

I prefer to use Boneless Chicken Thighs for this recipe because they are moister than breast meat, but if you are more into white meat, you can use boneless breasts that have been sliced in half.

Here's how to do it: 

Open-Faced Pulled Buffalo Chicken and Maytag Blue Melts 
Serves 3 - 4

Ingredients:
4 Brioche Buns or large, sturdy Hotdog Buns split down the middle
3 Stalks of Celery, sliced into 1/8 inch pieces
1/2 teaspoon Olive Oil
Pepper to taste
1/4 Pound good quality Maytag Blue Cheese, chopped or crumbled 
1 Pound Boneless Chicken Thighs
1/2 an Onion - (Optional) for boiling the Chicken

Buffalo Sauce Ingredients
3 Tablespoons Frank's Red Hot Sauce
3 Tablespoons Melted Butter 
1 teaspoon Worcestershire Sauce
1/2 teaspoon Red Wine or Cider Vinegar


Method:
Boil a large pot of water over medium high heat with the Onion (if using).

Lightly Scoop out the middle of the buns if using Brioche. 

Preheat the broiler

Combine the sliced Celery, Olive Oil, and a pinch of Pepper in a small bowl. Set aside.

Once pot comes to a boil, add the Chicken Thighs. Cook for 5 minutes and then turn the flame down to medium heat and continue to cook another 15 minutes. Check for doneness. Juices should run clear and the Chicken should be fully opaque. 

Remove the Chicken to a surface for shredding. 

While the Chicken is cooking, prepare the Buffalo Sauce by combining all the ingredients in a small bowl. Feel free to adjust flavor by adding more Hot Sauce or additional spices.

Once Chicken is cooked, shred it as best you can using two forks, pulling it apart into strings. 

Pour the Buffalo Sauce over the Shredded Chicken. Place Buns in a broiler pan and stuff with ample amounts of Chicken. Top each sandwich with some crumbles of the Maytag Blue Cheese and broil for 2 minutes. 

Top with the Chopped Celery and serve hot.

Destination: Paris - Classic Croque Monsieur

Last week, the husband and I took a lovely trip to France. I have a real thing for this country - the people, the landscape, and of course the amazing food and wine. In just seven action-packed days, and with the help of our usual obsessive over-planning, we managed to really soak it all in. Here are a just a few highlights:

Between touring the City of Light and chateau and vineyard hopping the in gorgeous Loire Valley countryside, we enjoyed several very special meals.

Clearly, France offered no shortage of culinary inspiration, so when we got home, I had the urge to try to make something really simple yet classically French. Croque Monsieur seemed like just the thing. 


Croque Monsieur is basically a toasted ham and cheese made all the more sinful by the addition of a creamy sauce and grated gruyere topping. Below, I've adapted Martha Stewart's recipe just a bit. The result was gooey, delicious, and decidedly not diet. Enjoy and bon appetit!


Classic Croque Monsieur
Adapted from Martha Stewart
Serves 4 


Ingredients:
3 Tablespoons Unsalted Butter
1/4 Cup All Purpose Flour
2 Cups of Whole Milk
1 Cup Grated Gruyere Cheese plus 8 Slices of Thinly Sliced Gruyere
Kosher Salt to Taste
Black Pepper
Cayenne Pepper
Nutmeg
8 Slices Country Style White Bread - we used Arnold brand
6 Ounces French Bistro Ham Cold cuts or other cold cut Ham


Method:
Preheat the oven to 450 and set a rack in the middle and a rack near the broiler.
Toast the 4 Slices of Bread. Don't worry if they are extra crunchy. It will make for a nice texture later. Leave the oven on. 


Butter a baking sheet and set aside. 


Next, set two medium sauce pans on the stove. 


In one, melt Butter over medium-high heat. Gradually stir in the flour and whisk constantly until the mixture bubbles up. Continue whisking for about 3 minutes. The mixture will take on a golden peanut butter color. Turn off the heat and set aside.

In the other sauce pan, heat the Milk over medium heat. Once warmed, pour the hot milk into the first sauce pan, incorporating it with the butter and flour mixture slowly. Whisk briskly and continuously to prevent lumps from forming. Turn the burner back on medium and continue whisking. Allow mixture to come to a boil. Reduce heat to low and let simmer two minutes more. Stir in Half a Cup of the Grated Gruyere, and add Salt to taste, Pepper to Taste, and a dash of Cayenne and Nutmeg. Remove from the heat and pour the cheesy sauce into a bowl to cool for 2 to 3 minutes. 

Next, lay 4 slices of Toast down on a work surface. 
Cover each slice with about a Quarter Cup of Cheese Sauce.

To assemble the sandwich, lay one slice of Gruyere on top of the sauce, followed by a slice to a slice and a half of Ham. Top Ham with another slice of Gruyere, and top each sandwich with the remaining slices of toast. Press lightly to close the sandwich. Pour another Quarter Cup of Sauce on top of each sandwich and sprinkle them all with the remaining Grated Gruyere.

Place sandwiches on the baking sheet in the oven and bake for about 5 minutes until cooked through.

Turn on the broiler and finish sandwiches for another 2 to 3 minutes under the broiler until the tops become golden brown and bubbly. Serve immediately.

Dinner Sandwich - Ribeye with Fried Egg, Mixed Mushrooms, & Parsley Vinaigrette

Sandwiches. 
Americans just love them. And for good reason. Just the other day a major discussion broke out in my office on the subject of the many virtues of the Turkey Sandwich. The participants, myself included, were impassioned. The conversation got me thinking. Sandwiches really are pretty wonderful. So wonderful, in fact, that I should dedicate my next blog post to them.

As luck would have it, I own a cookbook dedicated totally to sandwiches. It happens also to be penned by the man that among many other culinary achievements, has elevated sandwich-making to an art: Tom Colicchio.

Sure, Tom's a celebrity chef, but a legit one. His original restaurant, Craft, remains one of our favorite places to go for a fancy occasion. Watching Top Chef was and still is a ritual in our house, so several years ago when I heard that Tom would be signing his new sandwich cookbook, 'wichcraft, at our local Williams Sonoma, I got ready to stand in line for the perfect gift for the future Mr.NK.

'wichcraft is a book worth owning if you're serious about sandwiches and want to invest a bit of time in them. The recipes can be intense, even a little complicated, but if you're looking for a standout meal-worthy sandwich or just to jazz up an everyday American classic like the PB&J, it's really worth a look. The photos alone are inspiring, and as with many cookbooks that I love, it serves as a great jumping off point for many adaptations. The recipes can also be naturally simplified using store-bought components.

The book signing was quite a funny scene. As you can see, I requested that Mr. Colicchio and his collaborator, Sisha Ortuzar, autograph the book using a certain someone's pet name. Chef Who?, Tom asked with furrowed brow, looking on the verge of mild annoyance. KO-A-LA, I clarified.  Thankfully, Both men very graciously obliged, despite my ridiculousness. Autographs - check! Shame myself in front of lovably ornery celebrity chef - double check! 

Today, we'll be ever-so-slightly adapting Tom's wonderful recipe for Skirt Steak with Fried Egg, Oyster Mushrooms, and Parsley Vinaigrette, as featured in the 'wichcraft cookbook. Splurge on a quality steak for this one. We're using Ribeye because, well, it's my fave. One good sized cut of meat will go a long way here. And as always, all foods are better with a runny egg on top of them.

Adapted from Tom Colicchio and Sisha Ortuzar's 'wichcraft cookbook 
Serves 3

Ingredients: 
2 Tablespoons Extra Virgin Olive Oil
1 teaspoon minced Garlic - we used milder Elephant Garlic, but regular is just fine
8 ounces pre-packaged mixed mushrooms - we used Baby Bellas, Oyster & Shitake varieties
Kosher Salt and Black Pepper
1 Lb Ribeye, preferably grass fed, brought to room temperature
2 Tablespoons Unsalted Butter
3 Eggs, preferably free range, organic
3 Ciabatta Rolls or other soft but sturdy bread
*2-3 Tablespoons Parsley Vinaigrette - Recipe Below

To Make the Vinaigrette:

Combine ingredients in a bowl until fully incorporated. 
Parsley vinaigrette can be made ahead and will keep in the fridge for about four days.

To Make the Sandwiches: 

Set your Parsley Vinaigrette aside.
Add Oil and Garlic to your skillet and heat over medium flame.
When garlic becomes aromatic, add the Mixed Mushrooms and cook about five minutes until tender and browned.

Remove Mushrooms from the heat and place in a large bowl. Pour in the Parsley Vinaigrette and stir together to incorporate. Set aside.

Season the meat on both sides using Kosher Salt and Pepper. Heat a grill pan to Medium High and add the meat. Cook 3-4 minutes on each side to bring it to a perfect medium rare.
Remove Steak from the grill and set over the bowl with the Mushroom and Parsley Mixture. Tom is ingenious, by the way. We do this so that the Steak juices combine with the Mushroom and Vinaigrette. Cover Steak and bowl with foil to keep warm.

Using a large skillet over medium-high heat, melt 2 Tablespoons of Unsalted Butter.
Once butter is hot, add your eggs, one for every sandwich you are making. 
Flip eggs carefully half way through the cooking to seal the top a bit. You want the yolks to be runny in the middle yet set around the edges. Season with Salt and Pepper and remove to a plate. 

Take your Steak and thinly slice the meat against the grain.

Cut the Ciabatta rolls in half and scoop a bit of the bread from the top half.   


To Assemble: 
Lay slices of meat across the bottom half of the bread. 
Top with Mushroom and Parsley Vinaigrette Mixture.

Finish with an Egg on top of it all.

Close the sandwiches and slice in half.

I must say, the result was incredibly delicious. The grass-fed Ribeye was amazingly tender, the Ciabatta, soft but sturdy, and the parsley and mushroom mixture added just the right amount of mild, fresh flavor with a hint of vinegar to cut the richness. Try it, and enjoy this and all your dinner sandwich adventures.
