Tried & True - Summer Menu Inspiration

I say it every year. Summer is my favorite time to cook. From simple yet elegant meals driven by the best seasonal ingredients (basically my goal all year), to desserts that practically make themselves, no time of year inspires me more.

As you think about your own cooking goals this summer, whether they include big parties or intimate entertaining, I thought it might be helpful to compile a list of just some of my tried and true summer dishes. You can rest assured that all of them have been made multiple times and, better yet, you can prep or make almost all in advance. This means you'll have more time to enjoy your parties, which is as it should be. I hope you enjoy and I wish you a season you can savor in more ways than one.

Simplicity - Grilled, Marinated Calamari Salad

Every season there is at least one dish I make for the first time then repeat over and over again. What can I say? I'm a creature of habit. Once I find something I like, I see no problem with enjoying it multiple times, often in quick succession. My high school and college friends can attest; I ate the same lunch almost every day for a year at a time. This doesn't mean I don't like variety, and that's what's so beautiful about all the fresh Summer Salads you see here today.

While the Grilled Calamari Salad Recipe we will share below was the clear winner, we enjoyed several other protein variations (with Shrimp and even Marinated Flank Steak) throughout the course of this summer season. Turns out that almost any well cooked (ideally a little charred) grilled item tastes amazing over fresh, seasonal and, best of all ,colorful summer produce. 


So I know you're with me in declaring 2016 "The Summer of Salad." 

You see, I love vegetables. I love them as much or more than meat and fish, but that doesn't mean I want to have to choose. Creating easy yet elegant lunches and dinners using salad as a base is a great way to lighten up summer fare and highlight the best produce the season has to offer. Plus, if you're into the low carb thing, (no pasta?) this sure does the trick!

Below you'll find plenty of ingredient inspiration for a few of our favorite summer lunch salads plus the recipe for the Simply Grilled, Marinated Calamari that starred in so many fantastic meals. 

Note: All of the salads you see bleow are lightly dressed with a simple Lemon (or Orange) Vinaigrette (below). For the Orange variation just sub out all Lemon ingredients with Orange Juice and Zest in Equal Measure and add a drop or two of Vinegar to taste.

Prepping the Marinated Flank Steak Salad - Sliced Peaches, Thin Sliced Radishes,

Simply Marinated & Grilled Calamari
Serves 2-3 atop a salad of your choice 

Ingredients: 
1 Pound Cleaned Squid (Calamari), tubes and tentacles
1 Tablespoon Lemon Juice
Zest of 1 Lemon 
2 Tablespoons Olive Oil 
Salt & Pepper to Taste 

Method: 
Preheat a grill or grill pan until very hot. If using an outdoor grill place a grill pan on it to preheat (Squid will fall through the grates otherwise) 
Place Squid in a Ziploc Bag or airtight container. Add marinade ingredients and let sit in the fridge 30 minutes to a half hour.

Place Squid on a hot grill pan and cook until golden in parts, a few minutes per side. Squid will be opaque, firm but not rubbery. Serve over Vinaigrette Dressed salad, plus a little Salt to taste, and enjoy!

The Husband Cooks - Warm Shrimp Salad With Green Beans & Chilies

He's hardworking, funny and smart, and he also knows his way around the kitchen. Or in this case, the grill. For today's feature, I'm sharing my husband's recent showstopper of a meal, his rendition of Mario Batali's Warm Shrimp Salad With Green Beans & Chilies

The only change he made to the recipe was using jalapeno peppers instead of red chilies and slivered almonds instead of hazelnuts. If you're looking for a light, grillable summer meal, this is the one. Serve it with a nice hunk of bread to soak up the delicious flavors.

In Season: Apricots - DIY Apricot Butter

Fruit Butters are a great way to make use of overripe fruit. They're also a bit easier to make than jellies and jams. Today, we're using the stone fruit star of the season, the Apricot, as the base for a smooth and tangy fruit butter that is irresistible by itself on bread or crackers, or, better yet, alongside butter, cream cheese, ricotta, or even sinful mascarpone. (We admit to an Apricot obsession this summer - check out our recent Apricot Mint Sorbet).

We love our recipe all the more because it employs ingredients you'll find handy in your pantry (except for the fresh Apricots of course), and in just an hour and fifteen minutes' time, only a bit of which is spent actively cooking, you'll emerge from your kitchen with two cups of Apricot Butter that tastes just as good or better than anything you can find in a gourmet store. Enjoy it yourself or cool the mixture and spoon into a mason jar for a charmingly homemade hostess gift. Apricot Butter can be stored in the fridge for up to a week for a taste of summer anytime the mood strikes.

Yield: 2 Cups 

Ingredients:
10 or 11 very ripe medium-sized Apricots, carefully pitted and halved
1 Cup Orange Juice
1/3 Cup Water
3/4 Cup Sugar
1/4 teaspoon Real Vanilla Extract
3 Tablespoons Lemon Juice
2 good pinches of Salt

Method:
1. Place all ingredients in a large saucepan and bring to a boil. Partially cover and over moderately-high heat, allow the mixture to to simmer. Stir occasionally and keep an eye on it for about 10 minutes. Apricots will become very soft.

2. Uncover the pot and and lower the flame tp just under medium. Continue to cook simmer, stirring every few minutes, until the mixture is very thick. About an hour. 

3. Scrape mixture into food processor or high powered blender (we used our Vitamix) and blend until quite smooth. Allow the mixture to cool fully before refrigerating in an airtight container. Apricot Butter will keep up to a week in the fridge.

Weeknight Indulgence: Strawberry Pretzel Sundae With Mascarpone Gelato

How do you get inspired by something you didn't even order? Easy. When the description itself is so mouthwatering that you can't stop thinking about it for weeks. Positively stuffed by a great meal a few weeks ago at The Topping Rose House, Tom Colicchio's new(ish) restaurant venture out in scenic Bridgehampton, we were compelled towards uncharacteristic modesty when it came to our dessert order. We opted for a very spartan scoop of interesting house made ice cream - cream cheese flavor to be exact. An odd choice to be sure but, I must say - delicious! The flavor was not too sweet, a bit tart actually, but overall, very refreshing. 

Still, as time went on, I just could not stop thinking about a dessert on the menu that we'd passed on: a sundae, but not just any sundae, one that incorporated  our tangy cream cheese ice cream with decadent fresh strawberry compote and salty crumbled pretzels. YES.

With Strawberries in season and so delicious this year, I felt I had no choice but to embark on a mission to find this unique ice cream flavor elsewhere, or at least a worthy stand-in (in this case, Il Laboratorio del Gelato's sinful Mascarpone Gelato was just the thing). 

When to concoct this much anticipated sundae? Any time you could use a little pick me up. The Strawberry Compote is super fast and the final result will pretty much make you day. You can bet this is going to make the summer dinner party rotation. And it's kid friendly too.

Fresh Strawberry & Pretzel Sundae with Mascarpone Gelato
Inspired by The Topping Rose House / Tom Colicchio 
Serves 2 

Strawberry Sauce Ingredients:
1/3 LB Ripe Stawberries, hulled and sliced uniformly. Slice once in half when done
1 heaping teaspoon Sugar (optional)
Pretzel Crisp make the perfect topping,  Photo:NK
1/2 teaspoon Good Quality Vanilla Extract
1 Tablespoon Water 

Sundae Ingredients:
Mascarpone Gelato or Cream Cheese flavored Ice Cream (you can substitute any other not-to-sweet, relatively neutral flavor  such as malt. Note: if you use vanilla gelato or Ice Cream,  you may want to omit the sugar from the Strawberry Sauce depending on how ripe your berries are) 

1 big handful of Salted Pretzel Crisps or Salted Pretzels of your choice, crushed into coarse pieces

Fox's U-Bet or other good quality Chocolate Syrup

Method: 

To make the Strawberry Sauce, place Strawberry slices in as small pan over medium heat. Add a heaping teaspoon of Sugar, the Vanilla extract, and a tablespoon of water. Allow to cook, stirring, a few minutes until liquids thicken and Strawberries break down a bit. Once sauce has reached the desired consistency (we like ours with good chunks of Strawberry and a nice amount of the sweet syrup), turn off the stove and allow it to cool completely. 

To serve: Scoop two generous balls of Ice Cream or Gelato into a sundae dish. Top with Strawberry Sauce and a handful if Pretzel Crumbs. Drizzle with a little bit of Chocolate Syrup. Garnish with a Mint Sprig. Enjoy!!

Ready In Minutes - Summery Seafood Feast For 2

Summer is not the time the slaving over a hot stove, but that's no reason to miss out on a delightfully doable (and a little fancy) dinner at home. When I think about fast and light stovetop meals, seafood often pops to mind as my main ingredient. Today we give you two easy and incredibly flavorful dishes fit for a laid back Sunday meal or completely adaptable to an effortless company dinner. A chilled appetizer of Poached Shrimp with Coconut Water and Lime is bursting with bold spicy flavor, and because it's served cold, it can easily be made ahead. Our entree of Lemony Calamari Pasta is elegant, economical, and also, ready in a flash. After prep, you'll need just under a half hour for BOTH today's dishes - each of which have wow factor and look beautiful. So pat yourself on the back, crack a nice bottle of well chilled white, and enjoy those sultry summer evenings while they last.

Note: If you are making both dishes, we recommend you put together the Poached Shrimp with Coconut Water and Lime first as it should sit and chill for 30 minutes - the perfect amount of time to prep and cook the pasta. 

Spaghetti Rigati With Lemony Calamari
Serves 2

Ingredients:
1/2 Pound Spaghetti Rigati 
4 Tablespoons Extra Virgin Olive Oil, divided 
2 Large Cloves Garlic, minced
1/2 Pound Fresh Calamari, tubes and tentacles, cleaned, tubes sliced into 1/4-inch rings
(For an easy way to slice tubes, dry Calamari well and fold it over once the long way before slicing. You may want to brace your non cutting hand with some paper towel inside it to minimize slipping). 

3 heaping Tablespoons Parsley, finely chopped  
1/2 teaspoon Crushed Red Pepper
Zest of 1 Lemon
2 Tablespoons Lemon Juice
2 Tablespoons White Wine or Rose, optional but recommended 
Salt 
Pepper

Method:
1. Set a large pot of salted water to boil for the Pasta. Set all ingredients above out in in preparation to cook, measured out if possible. Once Pasta Water is boiling, Add the Spaghetti Rigati (or other long, thin pasta) and cook according to package instructions.

2. Meanwhile, prepare the Calamari. In a large, high-sided sauté pan, warm 2 Tablespoons Olive Oil over medium-low heat for a minute. Add the Garlic and stir until fragrant and just beginning to turn golden, being careful not to burn it. About 2 minutes.

3. Add the Calamari and turn up the flame to medium. Cook, 2 to 3 minutes, stirring occasionally, until opaque. Calamari cooks quickly and becomes rubbery very fast. Keep an eye on it. As long as it's opaque and the texture's to your liking, it's cooked. Remove cooked Calamari to a bowl and drain off the liquids. Season the Calamari with a good sprinkle of Salt and a few turns of Black Pepper. 

4. By this time your Pasta should be cooked. Drain the pasta and reserve a few Tablespoons of Pasta Water. 

5. Add the Lemon Juice, Lemon Zest, Wine and a Tablespoon of Pasta Water into the deep sauté pan. Turn the flame up to medium again and warm through for about a minute. Add the Pasta and toss well. Add Crusher Red Pepper, Parsley, and season with a bit more Salt and Pepper. Stir in the Calamari.

6. To serve, plate the Pasta and drizzle each plate with the extra Olive Oil. Enjoy!

Poached Shrimp With Coconut Water & Lime
Lightly Adapted from Food & Wine, Edward Lee
Serves 2 - 3 

Ingredients:
12 Medium Shrimp, shelled, cleaned, tails on or off depending on your preference
1/4 Cup Coconut Water
2 Tablespoons Red Wine Vinegar, White Wine Vinegar or Unseasoned Rice Vinegar
2 Tablespoons Fresh Lime Juice
2 Garlic Cloves, Minced
1 Tablespoon fresh Ginger, grated
1 Tablespoon Cilantro, chopped (optional)
1/2 Red Bell Pepper, seeded and cut into a small dice
1/2 Sweet White Onion or Red Onion, sliced
1/2 a small Jalapeño, seeded and thinly sliced
Kosher Salt
Pinch of Sugar
Black Pepper

Method: 
1. In a medium saucepan of boiling water, poach the Shrimp unto cooked through - roughly 2-3 minutes. They will be opaque and springy but not at all tough. Drain shrimp and place in an ice bath or rinse through a colander with ice cold water. 

2. In a medium bowl, mix together the Coconut Water, Vinegar, Lime Juice, Cilantro, Garlic, Ginger and Sugar. Season the liquids with Salt and Pepper. Toss together with the Poached Shrimp and all the leftover ingredients. 

3. Cover the mixture and chill for 30 minutes before serving. Make ahead: you can prepare the Shrimp and the Marinade can be refrigerated separately overnight.

Fast, Fabulous & Frozen - Apricot Mint Sorbet

Today's post is going to be really quick, just like this wonderfully refreshing sorbet for your high powered blender - coming to you just in time for the warm weather. If you're looking for a sweet, tart fix, why not whip up a frozen treat using beautiful in-season Apricots. Healthy though it may be, this dessert really delivers. The twist? Fresh Mint Leaves. so well with sweet stone fruit; the combo is really surprising and makes for a very complex yet subtle flavor profile. 


I created today's speedy Sorbet recipe quite by accident. I had some leftover Mint leaves from our recent Gnocchi with Peas & Spring Herbs that I didn't want to waste. Then a week or so later, my bunch of Apricots I'd been looking forward to eating were ripening at a faster pace than I could enjoy them. Whenever fruits and herbs are at their peak, it's a great idea to freeze them in order to minimize waste. So I pitted and sliced up my Apricots, and weeks before that, to preserve my mint, I had placed three or four leaves in the bottom of each compartment of an ice tray before covering with water. Fast forward to the present day, and in rummaging through my freezer, the thought occurred to me that these two ingredients might just work wonderfully together.

Mint Ice Cubes make a fun addition to summer drinks, and in this case they provide a great way to add both ice and Mint to your blended creations. 




To recap: Make Mint Ice Cubes using 3 or 4 leaves of Mint in each ice cube compartment, cover with water and freeze!








Fast Apricot Mint Sorbet 
Serves 2
4 Mint Ice Cubes (see note above /with about 12 leaves of mint, three leave in each cube)
2-3 very ripe Apricots, pitted, cut into small slices and then frozen
2 teaspoons Agave, Honey, or other sweetener if your choice
1 Tablespoon Water (only if needed to thin out the consistency)

~Blend in a high powered blender until very smooth, scoop out, and serve immediately!

Gambas al Ajillo - AKA: Garlicky Tapas Heaven (in minutes!)

Ever walk by an Italian restaurant or pizza place and pause a moment to smell the intoxicating aroma of warm garlic? I sure have, and if you ask me, there's nothing really like it. Where garlic is concerned, the more the better - and who cares about garlic breath, anyway? I consider it a bonus. That's why when I was recently jonesing to put together a quick tapa as an al fresco appetizer (summer is here!), I stopped right at this drool-worthy Garlic and Shrimp combination: Gambas al Ajillo or Shrimp with Garlic, Spanish style.

Gambas al Ajillo can be found all over Spain and really anywhere where tapas are served. It doesn't get more classic than this garlicky to the max dish. And when you see how fast this delicious tapa comes together,  you'll be completely smitten. It is almost too easy. And the taste, oh the taste - just luscious. A nice kick of spice from the Crushed Red Pepper and smoky complexity from Spanish Paprika - one of my favorite spices that is also responsible for the striking reddish color of the shrimp sauce, make an amazing flavor combo. Be certain to buy yourself a nice loaf of rustic peasant bread to soak up the garlicky oil goodness at the bottom of the bowl. Now sit yourself down with a a nice dry white or rose and enjoy the king of all tapas. You will not be disappointed!


Gambas al Ajillo / Spanish Garlic Shrimp Tapa
Lightly adapted from About.com (topic: Spanish Food)
Serves 4 as an appetizer

Ingredients:
24 Medium Shrimp, peeled and deveined, tails left on
5 large Cloves of Garlic, finely minced
1 teaspoon Red Pepper Flakes
1 teaspoon Sweet Spanish Paprika
3 Ounces of Cognac (or substitute Dry Sherry or Bourbon)
1/2 Cup Extra Virgin Olive Oil
1/3 Cup chopped Italian Parsley
Juice of 1 Lemon 
1 round, crusty Peasant Loaf, cut into large chunk and lightly toasted
Coarse Salt
Black Pepper

Note: this is a fast cooking recipe so be sure to have all your ingredients measured and ready to roll before you start. 

Method: 
1. Heat Oil over a medium flame for a minute and add the minced Garlic and Crushed Red Pepper. Stir gently for about 2 minutes, taking care that the Garlic doesn't burn. 
The mixture will become fragrant. 

2. When the Garlic becomes just slightly brown, add the Shrimp, Lemon Juice, Cognac (or substitute) and Paprika. Raise the flame to high and stir constantly until the Shrimp become pink and curl up. About 2 more minutes.

3. Season the mixture with one or two healthy pinches of Salt, and ample Black Pepper. 
To Serve: Plate equal portions on Shrimp into individual bowls and add some of the Garlic and Oil Mixture on top. Sprinkle each bowl with chopped Parsley and serve with a generous wedge of crusty toasted Bread.

The Essence of Summer - Tomato and Herbed Mayo Sandwich

My husband keeps talking about us only having four more weeks of summer. He's said it at least three times in as many days. It's driving me crazy, actually. 

I stomp my foot at him in protest (he loves when I do that) and tell him to stop being such an alarmist.

Come on now, people - summer doesn't actually end on Labor Day!  

It's quite a rare occurrence that my other half takes the glass half empty role. I'm usually the one with the pessimistic outlook (or as I like to call it, "being a realist"), but when it comes to summer, my favorite season of them all, I am in full-on denial. Loath to admit it though I may be, I will grant him that summer is going way too fast. So until all that glorious sun yields to the chill of Autumn, I'll be doing all I can to live in moment. That's right, I will relish the feeling of my toes wiggling freely in all their flip-flopped glory as I head out into the balmy air in full frolic mode every chance I get. Clearly, I also will be eating every fresh Tomato and ear of Corn I can get my hands on.

For me, there is truly only one sandwich that embodies the essence of summer and everything simple and wonderful about the season -- the much talked about, much loved Tomato and Mayonnaise Sandwich. (Check out a few of my favorite meditations on the subject HERE, HERE and HERE).         

Today, we'll be paying homage to this seasonal icon with our own take on the classic. We add a semi-controversial lettuce leaf for texture, and, though regular Mayo works really well (Hellman's full-fat, please!), we take ours up a notch with lots of finely minced Parsley and a touch of Oregano from my garden and, here's the topper - a game-changing sprinkle of Lemon Zest. Make this satisfying sandwich and extend your summer that much longer. 

The Must Haves:

Super Ripe Beefsteak Tomatoes - luckily, they're at peak season and everywhere
Good Quality Mayo
A Hint of Salt (we prefer Kosher Salt or Sea Salt) 
Black Pepper - lots 
and finally

Good Quality Toasted White Bread - I know, I know, but if ever you should return to White Bread, it's here.

Here we go - 

Tomato and Herbed Mayo Sandwich
Makes 2 Sandwiches

Ingredients:
4 Slices of Toasted White Bread
1 Beefsteak Tomato sliced into 1/4 inch thick rounds
2-4 Leaves of Oak Leaf Lettuce
Kosher Salt or Sea Salt
Lots of Black Pepper

Herb Mayonnaise
2 Tablespoons Italian Parsley, very finely minced
1 Tablespoon Oregano, very finely minced
Zest of 1 Lemon
1/4 Cup Mayonnaise

Method: 
Mix the Herb Mayonnaise ingredients together in a small bowl. 

Spread one side of the bread with a generous amount of Herb Mayonnaise. On the other piece of Bread, lay down a Lettuce Leaf and two or more slices of Tomato. Sprinkle Tomato with a good dose of Salt and lots of Black Pepper. Place the Mayonnaise half on top and close up the sandwich. Enjoy!
