Pretty In Pink - Seasonal Fruits in Drinks & Hors D'oeuvres

Mother's Day was sunny and beautiful as ever this year, and my husband and I were blessed to be able to spend it with our two very special moms at a fun barbecue with the rest of the fam. For one reason or another, my brain's been a bit fried lately, and as a result, I had been having trouble thinking up a plan for my usual responsibility, the hors d'oeuvres. Sure, I could have consulted this blog I know for lots of tried and true nibbles (after all, bite-sized appetizers really are my favorite), but I was just in the mood to try something brand new, ideally using the best produce of the season.

Only a day away from the big event, the answer came, and not a moment too soon! A basic hors d'oeuvre served at my good friend's baby shower would provide the inspiration for today's strawberry cream cheese sweet and savory toasts. Date nut bread slathered with whipped cream cheese and then topped with a sliced ripe strawberry ended up being the most amazing and easy to make treat - sweet yet not too sweet. After undertaking some further research around cream cheese and date nut bread, I learned that this combination is also reasonably famous in retro food history. My variation using semolina bread will take on more of a sweet/salty quality, but I recommend both versions for your next party. They could not be simpler and with strawberries in season now, they're a wonderful way to showcase everyone's favorite berry. 

Hors d'oeuvres aside, a complimentary beverage that our moms would love also seemed in order. For this, I turned to the peak season fruit I've been eating non-stop lately - the Grapefruit. Trust me, grapefruit is particularly fantastic right now. You should go out and get some next chance you get. 

I am happy to say that what I came up with was a drink that's pretty in pink and refreshing and summery as they come. I even decided against adding alcohol this time (I know, "who are you and what have you done with Mr. & Mrs. Neurotic Kitchen?). Rest assured that I bet this would be mighty delicious with a shot of vodka or gin in it, should the mood strike. 

Need more nibble ideas? Also pictured above you will find Savory Rosemary Wafer Crackers (we like 34-degrees brand) spread with luxurious Mascarpone Cheese and topped with a slice of fresh Apricot or any other in season stone fruit. Finish them with a sprinkle of black pepper and serve right away!

Simple & Refreshing Grapefruit Soda
Makes enough for 6 Drinks 

Ingredients:
Juice and Pulp of 1 Ripe Grapefruit - for syrup base
3 Tablespoons Agave Syrup
6 Sprigs of fresh Rosemary
24 ounces Seltzer Water
About 12 Ounces Ruby Red Grapefruit Juice (fresh squeezed or from a bottle)

Method:

First, make some Shortcut Grapefruit Syrup:
Combine the juice of 1 very ripe Grapefruit with 3 Tablespoons Agave
To make your drinks: 
Set up 6 short tumbler glasses and add to each 2 Tablespoons Grapefruit Syrup.
Next, fill each glass 2/3 of the way with Seltzer Water and add 3-4 Ice Cubes. Stir.
Pour two big slashes of fresh squeezed pink grapefruit juice or bottled pink grapefruit cocktail. Garnish with Rosemary Sprigs and enjoy!

Sweet & Savory Strawberry Cream Cheese Toasts
Serves 8

Ingredients:
1 Round Loaf of Seeded Semolina or other crusty bread, cut into thin slices then cut into thirds.
1 tub Whipped Cream Cheese
2 Tablespoons Agave or Honey
Olive Oil 
Coarse Salt

At least 12 Ripe Strawberries hulled and halved

Method:
1. Sprinkle sliced Bread with Olive Oil (I like to apply my oil by pouring some into a small bowl and dabbing some scrunched up paper towel in it before stamping it onto the surface of the bread - the method works really well~) and toast until slightly golden. While toast is still warm, sprinkle with Coarse Salt. 

2. In a separate bowl, lightly mix about 4 ounces of the Cream Cheese with 2 Tablespoons Agave and gently combine. If you require more Cream Cheese mixture you can repeat this process later. 

3. When ready to serve, spread a follow of sweetened Cream Cheese onto each toast and top with a Strawberry half. Serve immediately and enjoy!

It's hurts me to even utter these words but as you probably know, this is going to be Mad Men's final season. Over the past few years I've celebrated these momentous premier nights by cooking up some easy yet elegant Sixties-inspired dishes and hors d'oeuvres. Extra-Curricular Cocktailing - Infused Alcohol & Simple Syrups

My best friend is mighty talented. By day, she's a Social Worker and Vocational Counselor who also has a specialty in Horticultural Therapy, not to mention a fierce green thumb.

In her spare time, she cooks healthy vegetarian meals, bakes some seriously tempting sweets, and dotes on her husband, dog, and cat, all in-between weekend camping trips and farming conventions. When I met up with her the other day, she matter-of-factly mentioned that she'd just decided to walk to meet me, you know, a hundred city blocks. She is the urban-frontierswoman I'll never be. 

Since her work results in her spending a good deal of time at the Horticultural Society of New York, she suggested I join her for one of their workshops. One that also happened to feature one of our favorite pastimes.

It was fun to be in a classroom with my besty again, since the last time was probably in fourth grade. Back then, we were ever teacher's nightmare what with our inappropriate outbursts and ill-timed giggles. We managed to keep it together for most of this engrossing class, but then again, some things really never change. 

Our Bitters, Infusions and Simple Syrups class was taught by Sarah Lohman whose very cool blog, Four Pounds Flour, focuses on Historic Gastronomy, or exploring historic recipes, food customs, and the stories behind centuries of food and drink across cultures. 

We learned a lot and Sarah was very entertaining as well. Among the highlights, I found out that it is super easy to infuse spirits with all manner of flavorings - herbs, fruits, even vegetables. Unsurprisingly, some hipster-ish looking dude even asked about infusing Bacon into Vodka. Apparently, this too is within reach. 

We even made our own homemade Bitters which are steeping as we speak. They should be ready in a few more weeks!

In today's post, we'll explore some fast recipes so that you too can create the  basic building blocks for mixing a great cocktail. Creating homemade Liquor Infusions and Syrups to enhance your mixed drinks is easier than you think. We'll even try our hand at an original cocktail with Basic Simple Syrup and my homemade Lemon/Lime Vodka. I like to call it a Grown Up 7 Up. Enjoy! 

*Basic Simple Syrup
1:1 Ratio of Water to Sugar 
(1 Cup Water to 1 Cup Sugar, etc)

~To create: heat water and Sugar over low heat until Sugar has fully dissolved, stirring from time to time. 

~To infuse: while Sugar and Water is heating add ingredients of your choice to impart flavor. This is best done with dry ingredients such as Citrus Zest, a Cinnamon Stick, and Herb, etc.

Homemade Sour Mix

2 Cups Fresh Lemon Juice
1 Cup Simple Syrup

~To create: Mix Lemon and Syrup and use in your favorite cocktail. The best way to use sour mix? Margaritas of course. I've also been know to enjoy a Whiskey Sour now and again. 


*NK's Own Lemon/Lime Infused Vodka
Makes 1 Cup (8 ounces)

1 Cup Smirnoff Vodka
Peel of 1/2 a Lime
Peel of 1/2 a Lemon
1 Wedge of Lime
1 Wedge of Lemon

~To create: Add Vodka to an airtight container. Squeeze and twist rinds over container to Let sit at room temperature for at least week, shaking from time to time. When ready to use, chill in the refrigerator and strain out solids. Enjoy with your favorite mixed drink.
Note -the higher the proof of your Vodka, the faster the flavors will infuse. 

Grown Up 7-UP
Yields 2 Drinks

Ingredients:
8 Ounces Seltzer
2 Ounces Simple Syrup* +1 teaspoon Simple Syrup, divided

3 Ounces Lemon/Lime Infused Vodka*above
2 Lime Rounds for Garnish 

2 Lemon Wedges, for squeezing
2 Slices Lemon Peel for the Lemon twists


Method: 
Stir together Seltzer, 2 Ounces Simple Syrup, 3 Ounces of Lemon/Lime Infused Vodka and the Juice of 2 Lemon Wedges. 

Place Ice in two glasses and pour mixture over each. Take each Lemon Twist and squeeze/twist it over each glass. This action allows the essential oils from the Lemon Rind to be dispersed over the drink imparting an aromatic layer to the cocktail. When done, toss each Lemon Twist into the glasses and garnish with Lime Rounds. Finally, float a half teaspoon of additional Simple Syrup over each glass and serve. Cheers!

Down Mexico Way - Ancho Chicken Tacos with Avocado Crema & Micheladas

Whenever I ask my husband if he's got any special requests for the next week's dinner lineup, he always responds (in a petulant child's voice he puts on for my amusement), "Tacos!!!" Really, I don't know why I even bother asking, as this is almost always his response. By now, it's a running joke in our house. One of the reasons Tacos are so universally loved is probably their amazing versatility. They really do offer something for everyone. We've surely explored the wonders of Tacos before on NK. As a refresher, check out our quickie version of Tacos al Pastor (my all time favorite Taco preparation, recipe HERE), and of course, my friend Marina's extremely delicious version Baja Fish Tacos - recipe HERE.

So I ask you, who doesn't love a good taco? 

This week's Taco inspiration comes from a recipe I adapted from Cooking Light. These spicy Mexican-style Chicken Tacos have a ton a flavor and not a lot of fat. Ancho Chile Powder provides a real kick, and cooling Avocado Crema adds richness. Best of all, these are incredibly easy to prepare.

Since nothing complements a Taco better than Beer, we'll also share our favorite recipe for an amazing, spicy Mexican Beer-based cocktail, the Michelada. 

Quick and Easy Ancho Chicken Tacos with Avocado Crema and Cilantro Slaw 
Adapted from Cooking Light
Serves 4 (2 Tacos each)

Ingredients:
1 Lb Organic Chicken Breast, boneless and skinless, cut into bite sized chunks
1 Tablespoon Canola Oil 
8 (6 inch) Corn Tortillas

For the Avocado Crema
1/4 Cup Light Sour Cream
1/2 Avocado, very ripe and cut into chunks
2 Tablespoons Lime Juice
1/4 teaspoon grated Lime Zest
1/8 teaspoon Salt 
2 Tablespoons Skim Milk

For the Spice Rub
1/2 teaspoon Garlic Powder
1 teaspoon Ancho Chili Powder
1/2 teaspoon Ground Cumin
1/4 teaspoon Salt 

For the Slaw

2 Cups Packaged Cole Slaw Mix
2 Tablespoons Lime Juice 
1/2 Cup Scallions, white and green parts, thinly sliced
1/4 Cup Fresh Cilantro, chopped
1 Tablespoon Canola Oil
1/4 teaspoon Salt

Method:
Prepare the Spice Rub by mixing all ingredients together. 

In a medium bowl, prepare the Slaw by mixing all ingredients together. Toss well and set aside.

Prepare the Avocado Crema by mixing the Sour Cream, 2 Tablespoons of Lime Juice, 1/4 teaspoon Lime Zest, Salt and Skim Milk in a bowl. Next, add the Avocado chunks. Using a fork, stir vigorously mashing avocado as best you can into the bowl to break it down. When you have made the mixture as smooth as possible, it should be a pale green shade. 

Heat a large skillet over medium high heat. 
Add 1 Tablespoon Canola oil. 
Toss Chicken pieces together with the Spice Rub until evenly coated. Add seasoned Chicken to skillet. Cook about 4 minutes, stirring frequently, until cooked through. Remove chicken to a plate, cover lightly,and set aside. 

While Chicken is resting, heat Tortillas according to directions. (We usually wrap 4 at a time in a damp paper towel and put them in the microwave for 25 seconds.)

To Assemble: Portion some Chicken in the middle of the Tortilla, drizzle with about 1 Tablespoons Avocado Crema, and top with a 1/4 Cup of the Slaw. Optionally garnish with a think slice of Avocado. Add your favorite hot sauce and enjoy!

Plus ~ A Bonus Leftover Idea for 2:
If you've got extra Slaw and Avocado Crema, just mix them together and save overnight in the fridge. The next day, chop up half an Orange or other Citrus and mix into the Slaw, squeezing a bit of the juice on top. Pick up an an extra Avocado, cut in half, and season with Salt and Pepper. Stuff with Avocado Crema and Orange Slaw. Makes a great side dish!

Now for the drink:

House Michelada
Adapted from Aida Mollenkamp
Makes 2 drinks

Ingredients:
4 Tablespoons Kosher Salt
1/4 teaspoon Ancho Chile Powder
1/4 Cup Bottled Lime Juice 
1 whole Lime, quartered
1 teaspoon Tabasco
+
1 teaspoon Cholula - (or instead of Tabasco and Cholula, two teaspoons hot sauce of your choice - less if you are spice averse)
1.5 Cups light Mexican Beer, we use Modelo Especial
2 teaspoons Low Sodium Soy Sauce (or 1 tsp Regular Soy)
2 teaspoons Worcestershire Sauce
6 Ice Cubes

Method:
Put Kosher Salt on a plate and sprinkle the Ancho Chile Powder over it. 
Rub a fresh Lime quarter around the rims of each glass and place it rim down into the Salt and Chile Mixture until evenly coated. 

In a separate pitcher or large glass, mix Beer, Lime Juice, 2 teaspoons of Hot Sauce (or less if you prefer), Soy Sauce, and Worcestershire. Mix well. Place 3 ice cubes in each glass and pour Beer Mixture over. Garnish with a Lime Wedge. Cheers!
