How To: Classic Italian American Cheese & Salumi Platter

Want to kick off a fabulous party? There's no better way to get the conversation going than by bringing your hungry guests together around a smashing cheese (and sometimes meat) platter. As the conventional wisdom goes, such a plate need not be complicated to create and there's no need to include more than just a few high quality components for it to be successful. While these are both absolutely TRUE statements, there is still something to be said for the buzz and mouthwatering visual you can create with a decadently abundant Cheese & Salumi plate that overflows with flavors, colors, and textures.

Italian Americans, having forged what I will lovingly call a new branch of their ancestral brand built around culinary extravagance ("abbondanza,"as they would say), are the force behind what many of us think of when we picture an over the top cheese and meat board. With this in mind, I glossed over years of other delightful themed cheese plates I've created (from French, to Spanish, to those inspired by the American South), and tapped into my Brooklyn Italian roots to bring you this classic Italian (American) Cheese & Salumi Platter. Classic Italian American Cheese & Salumi Platter
Serves 8 Adults

Ingredients:
3-4 Italian Cheeses (Clockwise from top of photo: sliced Ubriaco or similar (drunken goat cheese with purple rind), cubed Provolone (bold, salty and tangy- choose Provolone Dolce for a milder flavor), Marinated Mozzarella Balls (recipe follows - you'll need 10-12 small bite sized bocconcini balls), and Piave Vecchio (mild, snackable Italian Cheeese, a kid favorite too)

1 hard Italian Salami, sliced thin (we like many varieties from Olli Salumeria brand)

3/4 Lb to 1Lb Imported Prosciutto di Parma or San Daniele (choose the best you can afford), there are also many good domestic Prosciuttos as well

Mixed Olives (suggested: Castelvetrano variety in green, Kalamata/Nicoise  or Oil Cured in black) 

Radicchio Leaves (pictured with Provolone cubes nestled in them)

Fresh Oregano Sprigs (pictured as garnish and used in Marinated Artichokes) 

Italian Parsley (pictured as garnish and used with Mozzarella balls)

Halved Breadsticks
Carr's Water Crackers
Good Italian or French Bread, sliced thinly

Orange Fig Preserve - we like Dalmatia Brand 
Satsuma Mandarin Orange (ideally with stem and leaf) 
Olive Oil About a 1/2 to 3/4 Cup
1-2 Lemons 
1/2 head Garlic 
Salt
Pepper 

10-12 Small Balls of Mozzarella (Bocconcini)
1 Jar Roasted Red Peppers
1 14 Ounce Can Artichoke Hearts -Marinated Artichoke recipe follows (or buy ready marinated) 

To Prepare & Serve:

Make the Marinated Artichokes (method follows) 8 hours ahead of the night before.
Use your imagination on this one but basically you add 1/3 cup of Olive Oil to a small pan. Warm over medium-low heat and add 3-4 crushed Garlic Cloves, cooking until they become slightly golden. Add about a half a lemon, sliced, then a few sprigs of herbs such as Oregano or Fresh Marjoram. Turn off the heat and squeeze the rest of the Lemon's juice into the Olive Oil. Season with Salt and Pepper (and Crushed Red Pepper if you like).  Pour oil and all its contents over artichokes in a non-reactive container (glass) and let marinate 8 hours or overnight, tossing a few times along the way. Remove the Lemons and Herb Sprigs before serving.

Slice the jarred Red Peppers into bit sized pieces. Toss them with one to two cloves of thinly sliced Garlic. 

Toss the Mozzarella balls with some Olive Oil and a few pinches finely chopped Italian Parsley. Season with a little Salt and Pepper.

Cube and slice the various Cheeses as described above. I nestled the Provolone cubes in bright red Radicchio leaves (use 1 or 2 to form a cup)

Arrange all the other components as pictured. I like to use an oval or round wood board and a series of small bowls to hold the composed items (Mozzarella, Peppers, Artichokes). Enjoy!!

House Special - My Rules of Seafood Pasta

Seafood pasta is the signature dish of our household, with Linguine and White Clam Sauce inarguably holding the top spot. Still I am at heart, a lover of variety. That's why especially in summer when fresh fish most appeals to me, I like to change things up a bit and create different variations of shellfish over pasta, whether in white (oil/broth based) or red "tomato-based" sauces. 

One thing is for sure, once you master the very forgiving technique of most basic seafood pastas, you are almost guaranteed a quick cooking meal that tastes and feels special. Just be sure you are choosing the absolute freshest fish you can find - it will make all the difference.



Below you'll find some of my rules and techniques for successful Seafood Pastas plus a few of our favorite recipes that you can try. Once you get the hang of them you owe it to yourself to improvise one on your own. You'll be surprised at how easy it is. 

TIPS

1. Always clean, prep and chop non-fish ingredients ahead.  Seafood pastas are quick cooking so if you aren't prepared, your timing can be really thrown off. Chop all vegetable or herb ingredients in advance (usually garlic, shallot or onion, and a green like Italian Parsley). 

2. With shellfish, smaller is always better. Particularly with bivalves, the smallest Littleneck Clams or Mussels are the way to go. I always find them to be sweeter, fresher, and more flavorful. If you cannot personally select them just ask your fishmonger to select the smallest they can find. Shrimp is probably an exception to this rule, as the various sizes can all be delicious as long as they are fresh (and preferably, Wild & American). Consider your recipe in choosing the most ideal Shrimp size. 

3. Scrub and prepare all shellfish as directed - this is crucial because no one likes a sandy dish of food. Additionally, the process of cleaning is your opportunity to to do some additional quality control. I personally sniff every Clam, Shrimp or Mussel that I serve. If anything has a cracked shell, or smells a bit off, definitely toss it. Your nose will almost always steer you in the right direction. The internet has a wealth of information on cleaning your shellfish, and you'll find tricks for all varieties (for instance, Ina Garten submerges Mussels in cold water with flour to get them to unleash any sand or impurities). Your fishmonger may also be able to execute timesaving measures such as peeling and deveining Shrimp. Even if you have to pay a little extra, it's nearly aways worth it. 

4. Salt the pasta water. This is the rule almost always, but I find it particularly important with Seafood Pasta which is usually delicately flavored and layered.

5. Don't overcook the pasta. Please. Al dente is crucial, and to get it perfect ever time, I time it!  Also, always reserve some pasta water to loosen the pasta if necessary or add to the sauce. 

6. Don't overcook the Shellfish. Noticing a theme? Whether clams, mussels, here is my secret to success -- the second they open, take them out and set them aside in a bowl to catch the juices. To achieve this, you'll need to stand by your pot with tongs and work quickly, checking under the lid of the pot frequently. This is no big deal - Shellfish cooks so quickly and there's nothing worse than rubbery seafood (I'm talking to you, Calamari). 

7. This one is more a suggestion but I can't resist -- skip the Cheese! There's an unwritten rule that Italians don't put grated cheese on Seafood. I abide by this rule and it has never failed me. If you follow these steps, the flavor will be there - or there is not much a sprinkle of Salt can't fix. 

BASIC METHOD

1. Start your salted Pasta Water boiling. 

2. Add either Olive Oil or Salted Butter to a large, deep pan. (I actually like a mix of both - depending on how many you are serving, either one or two Tablespoons of each will do. Warm it over a medium flame taking care not to let it smoke). 

3. Add minced fresh Garlic or finely chopped Onion or Shallots. These are always good aromatic base ingredients. Cook gently taking care not to burn, especially if we're talking Garlic. If you burn the Garlic, dump it and start over. 

4. Time for Liquid. For Clam Sauce I use Clam Juice and White Wine. White Wine, even in a red-based sauce, is preferably. It won't turn your Calamari or Onions purple. That's a plus. As an aside, if you are cooking Calamari, always cook the Tubes before the Tentacles, removing the Tubes before cooking the Tentacles, the reason being that the Tentacles have the purple pigment which will turn the whole dish purple - it'll taste fine but won't look as good.

5. Once your liquid is bubbling, add the shellfish -- Clams, Mussels, a mix, etc. If you are working with Calamari, Shrimp, or finned Fish, I usually choose to cook them in a separate pan and toss it all together towards the end b. If you are adding "red" or Tomato Ingredients (fresh chopped Tomatoes, Sauce, Paste, now would also be a good time to add it). Cover to steam, checking frequently. As Shellfish begin to open, pull them out one by one right away and place them in a bowl to catch the juices. Continue until all Shellfish has opened and discard any that take much longer than the rest. 

6. Want it more brothy? You can always add more wine! Also add Salt, Pepper, Crushed Red Pepper as needed at any point in the process, just be gentle with Salt as Seafood has natural salinity. My rule of thumb: you can always add but never subtrace salt. If you over-salt, Lemon can some times counteract it. Speaking of Lemon, Lemon Juice and Zest are natural partners to "white" style Seafood Pasta preparations. 

7. When are you done? Your fish and Shellfish is all cooked, you have some sort of brothy sauce or tomato based sauce, and your Pasta is done and drained (with some pasta water reserved). Either plate the Pasta and top with Shellfish and Broth, or toss it all together in a large, high-sided pan. You can add a few drizzles of Oil and/or some Pasta Water to create more of a sauce (stirring consistently). Taste for Salt, Pepper and add fresh Herbs to finish-- my favorite is finely chopped Italian Parsley for versatility. Serve and enjoy!

Thanksgiving Starter - The Ultimate Cheese Plate

Thanksgiving 2016 is in the books, and it was a great one. We have much to be thankful for, especially in a world where far too many aren't as lucky as we. So for food on the table, a roof over our heads, a warm bed each night, and each other, I give thanks.  

Our Thanksgiving feast was fantastic (thanks to my mom-in-law for hosting), and as usual, my husband and I contributed starters. He made a really delicious Blue Cheese & Walnut Waldorf Dip, and I went with my personal favorite, a cheese plate. But not just any cheese plate, a cheese plate to end all cheese plates. One that would top all my others in variety and abundance. A mega plate, if you will.

Restaurant Inspired - Scarpetta's Tomato Basil Sauce

So many of my family's favorite at-home meals are inspired by incredible restaurant experiences. In the years where we were footloose and fancy free, we did a really good job of getting out for great meals around town, several that were really special and memorable with amazing dishes like:
Chili Lobster With Texas Toast, Brussels Sprouts With Figs and Mint Yogurt, and this unbelievable Mac & Cheese.

Nowadays, as parents, life may be a bit slower and budgets may be tighter, but the few times we do make it out, we really go and do it up. When date nights are scarce, it's a great excuse to make them count!

The latest wow dish came to us courtesy of NYC's impeccable Scarpetta, an elegant yet bustling high-end Italian joint that is not to be missed. Though everything we ate was excellent, their most famous dish, a humble bowl of Spaghetti with Tomato Sauce, was the stand out. Part of me didn't want to order it because I typically like my out-on-the-town dinners to be a bit more exotic, but I'd read so much hype, I just had to taste for myself. The secret to Scott Conant's brilliant sauce is two-fold as far as I can tell: lots of extra fat (oil, butter, etc. what could go wrong?) but also, Conant infuses Olive Oil with the fresh flavors of Classic Marinara, so that you get all the essence and freshness in an unmuddled, more forward way. The flavored Oil is applied at the end, and the various essences come through to your palate magnified and bright. It's pure genius.

Our interpretation of Scarpetta's famous Spaghetti Tomato Basil Sauce is based heavily off the Serious Eats piece and because we use high quality canned Tomatoes, it's done the fastest possible way possible. Obviously fresh Tomatoes are best, but I would only use themwhen they are at their best and perfectly in season. Though there are multiple steps to Conant's recipe, I've tried to write it up for you in a way that maximizes ease and cuts down prep time. 

I threw this together on a weekday and I was done in just under 40 minutes. SO worth it. While I could tell you my results were as good as the real deal, I'd be lying. Still, I must say, it came pretty darn close to the original and really blew our socks.


Scarpetta's Famous Spaghetti Tomato Basil Sauce (the fastest way)

Ingredients:

28 Ounce Can Whole Peeled (or diced) San Marzano Tomatoes
1 Pound Good Quality dry or fresh Spaghetti (Garofalo, De Cecco are good choices)
1/4 Cup + 2 Tablespoons Olive Oil
Coarse Sea Salt
1 Tablespoon
Bunch of Basil, 2 large sprigs set aside, 6 large leaves cut into thin ribbons
1/4 teaspoon Crushed Red Pepper Flakes + extra for infusing the Oil
6 Cloves of Garlic, whole  
1 Tablespoon Salted Butter
2-3 Tablespoons Fresh Grated Parmigiana Reggiano


Method:

Set a large Pasta Pot of well salted water to boil.

In another large, high sided pan, warm the 2 Tablespoons of Olive Oil over medium heat until shimmering. Add the can of Tomatoes and a big pinch of Salt and 1/4 teaspoon Crushed Red Pepper. Allow to cook for about 3 minutes then mush them well with a potato masher. (Start prepping your Oil infusion below). Allow to cook about 20 minutes or more (if you need to buy time) over medium heat, mashing and stirring from time to time. If the sauce gets too thick, add a Tablespoon or two of water to loosen.

While the Tomato Sauce cooks, infuse your remaining Olive Oil in another small pot. Add 1/4 Cup Oil, 2 large sprigs of Basil, a good pinch of Crushed Red Pepper Flake and 6 Large Garlic Cloves. Turn the flame very low and allow flavors to slowly infuse, ideally for about 20 minutes.

Pasta Water should be boiling now so add your Spaghetti and cook until just under al dente according to package instructions. When Pasta is done, scoop out about a cup of pasta water and reserve. Drain the rest of the Pasta and add it to the pan with the Tomato Sauce. Toss. Add Pasta Water, Tablespoon by Tablespoon and turn up the flame to medium. Continue to toss until Sauce and Pasta moves together in the pan. The Pasta Water will help it to bind thanks to the starch in it. Turn off the flame.

Throw a pat of Butter on top of the Pasta and Sauce and toss. Then stream in the Infused Oil, using a spoon to block the solids as you pour. Discard all but the oil. Toss. Now the add the Parmigiana Reggiano and remaining Basil Ribbons. Toss again. Taste for seasoning and add a pinch of Salt if needed.

Serve and ENJOY!!!!!!

Easy Assembly - Marinated London Broil With Potatoes & Arugula

Don't cook, assemble!


This is the mantra I always return to in attempting to keep my hors d'oeuvres simple and largely make-ahead so that I too can enjoy my own parties instead of being stuck in the kitchen. This smart strategy comes directly from Ina Garten, one of my easy entertaining muses. 

Last weekend, I applied the same concept to a main course that I created thanks to some visual inspiration  -- THIS mouthwatering dish from Barbuto NYC which fortuitously appeared my Instagram feed at just the right time...  


I had to have it. And because I could see that Jonathan Waxman's celebrated restaurant's creation was composed of just a few basic elements, I didn't feel compelled to try and hunt down the recipe. Instead, I thought about the big components (meat+potatoes+greens), and considered the food items I already had on hand (mainly, a very nice and comparatively affordable London Broil we'd grabbed on sale). From there, I created my game plan (London Broil lends itself to marinating) and a short shopping list (Mixed Potatoes, Arugula and Bleu Cheese).  

A few hours later, we had ourselves one delicious weekend dinner. The moral? When you don't get hung up on achieving perfection wonderful things are bound to happen.

Am I neurotic? Definitely. Do I often overthink my cooking? Sure. 
I do it so you don't have to.
BUT, you can still turn out a great, easy meal without all that angst. Turning your everyday cooking into something special is simple if you: 

Use delicious ingredients
Keep them in their simplest form
and assemble them beautifully. 


That's what today's meal is all about --- finding food inspiration and running with it. 

The largely visual world of the internet is great for this. From Pinterest, to Instagram to good old cooking mags, there's nothing wrong with using images to assemble your own winning recipes - your way. Do so without fear of failure. Keep things basic and build on what you know. The results will probably surprise you. The below is not really a recipe as much as a roadmap - don't hesitate toT put your own twist on it and have a little fun. 

Marinated London Broil With Rainbow Potatoes & Arugula
Inspired by Barbuto/Jonathan Waxman + Marinade by Epicurious
Serves 6 

You will need: London Broil + Your Desired Marinade Ingredients + Mixed, Small Potatoes + Greens of your choice like Arugula and crumbled Bleu Cheese (+ Olive Oil, Salt, Pepper)

Step One - MARINATE - Prepare the Marinade as below and let London Broil sit for 4 to 24 hours using the Epicurious recipe below. You can also feel free to sub-in any well flavored grilled Steak that suits your taste (Hanger Steak as in Barbuto's original dish, or others such as Flank or Skirt would be great choices).

Step Two - Start your grill for the Steak (or ready your stovetop grill pan) and Preheat the oven (450 degrees for your Roasted Potatoes). Now prepare your Greens - Spinach, or Arugula would be good choices. Wash them, dry them and place them in a bowl. Sprinkle with a little Olive Oil, Salt and Pepper. Set aside. Now roast your Potatoes -- toss 2.5 Lbs of assorted small Potatoes, cut in half if you like, (we used Purple Potatoes, Fingerlings, and Baby Yukon Golds) in Olive Oil, Salt and Pepper and BAKE them until tender - for about 30 minutes at 450. About 25 minutes before they are done, begin grilling the Steak until medium-rare (see timing and directions ABOVE). When it's finished and medium rare let it rest for 10 minutes. Slice Steak against the grain. 

Step Three - Serve - Arrange all ingredients on the plate as pictured and sprinkle with crumbled Bleu Cheese. If plates have gotten cool you can put them in the oven for a minute to rewarm.


Serve and enjoy!

Simply Elegant - Roasted Grapes

When it comes to food and entertaining, there is one mantra I live by: details matter, but the details should be simple. It's so true that with a tiny bit of extra care, you can elevate everyday items to be something special. I hope each and every day that readers of Neurotic Kitchen can see how easy it is to turn out beautiful food with minimal effort.

One way I like to elevate ordinary foods is by focusing on plating and pretty presentation. As is is oft repeated, you truly do eat with your eyes. 

The best hostess tricks not only enhance the beauty of a dish, but also the all-important taste of it.

And the little flourishes you add to your meal need not be complicated to offer pizzazz or refinement (for whatever mood you're in).

I first learned about Roasted Grapes when my mom's good friend served them as part of a fantastic shower she catered in my honor. She used them to anchor the most beautiful cheese board. They also happened to taste great - they serve as a good example of how amazingly easy steps that make all the difference in flavor and presentation. 

Roasting Grapes concentrates their flavor and makes for a more interesting visual presentation. You can add them to Crostini or plate them as is with your Cheese Selection. They can't help but add elegance with almost no effort.

Roasted Grapes

Ingredients: 
1 bunch of Seedless Grapes of your choosing - I like Red Globe or Muscat (pictured right) 

Olive Oil

Salt 

Pepper

Method: 

Preheat the oven to 400.
On a baking sheet, toss small bunches of grapes in a Tablespoon or two of Olive Oil, and then sprinkle with salt and pepper. 

Bake for 17-20 minutes until slightly crisped and soft on the inside. Serve slightly warm or at room temperature - can be made a few hours in advance.

Baking Away the Blues - Barefoot Contessa Oatmeal Chocolate Chunk Cookies

Hey winter! You stink.
Yeah, you could say we are pretty much over this gray, gloomy and bone chilling season. Our vitamin D thoroughly depleted, we want nothing more than a few sun rays to help us smile a bit bigger and just generally lighten up. It's a lot easier to look on the bright side and not have a short fuse when you have cookies. In particular, these cookies.

That's why we're sharing our latest recipe obsession, Ina Garten's Salty Oatmeal Chocolate Chunk Cookies

We've made them a few times (the recipe yields a ton and they make great gifts) and they are really pretty flawless. We wouldn't recommend making any changes to the recipe,  not that I normally quibble with the Contessa

These cookies solve a major problem in our household. That is, my husband finds Oatmeal Raisin cookies to be worthy desserts where as I require there to be chocolate chips in most of my cookies for them to qualify as an after dinner treat. What's worse than biting into a a delicious cookie and finding a Raisin instead of a Chocolate Chip?? You know you've been there! These cover all the bases and are absolutely fantastic. Though I usually fall squarely in the chewy cookie camp, believe it or not, I think these are best crispy. Ina gives you instructions on how to achieve both textures. We did not have Fleur de Sel around so the only teensy change we made was to sprinkle French Grey Salt, another Sea Salt which is quite similar, atop the cookies.

                      Ina Garten's Salty Oatmeal Chocolate Chunk Cookies
                      Yield: 28 - 30 Cookies 
                      Recipe exactly as it appears in Ina Garten's Make It Ahead

Ingredients:  
½ pound (2 sticks) unsalted butter, at room temperature
¾ cup light brown sugar, lightly packed
¾ cup granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs, at room temperature
1¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1¼ cups old-fashioned oats, such as Quaker
¾ pound bittersweet chocolate, such as Lindt, chopped in chunks
¾ cup dried cranberries
Fleur de sel
Method: 
Preheat the oven to 375 degrees. Line 3 sheet pans with parchment paper.

In an electric mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar on medium-high speed for 3 minutes, until light and fluffy. Scrape down the bowl with a rubber spatula. On low speed, add the vanilla, then the eggs, one at a time. Scrape down the bowl again.

Meanwhile, sift the flour, baking soda, and salt into a medium bowl. Mix in the oats. With the mixer on low, slowly add the flour mixture to the butter-sugar mixture. Don’t overbeat it! With a rubber spatula, stir in the chocolate and cranberries until the dough is well mixed. With a 1¾-inch ice cream scoop (or two spoons), scoop round balls of dough onto the prepared sheet pans. Sprinkle lightly with fleur de sel. Bake for 10 to 12 minutes, until nicely browned. Serve warm or at room temperature.

*If you prefer cookies thin and crisp, bake them straight from the mixing bowl. If you prefer them chewy in the middle and crisp outside, chill the balls of dough.

Brunch Rules + Chock Full o' Nuts Date Nut Bread

Sunday. A day of rest, a day of relaxation, and if you're lucky, a day for brunch. People are enamored of brunch, and for good reason. It's got so much to offer, and it even encourages day-drinking! 

Now I've mentioned that my husband is the undisputed master of breakfast foods (I nearly always leave this meal to him), but I know a thing or two about how to make your at-home brunch just a bit more special. As such, I give you my 

Brunch Rules:

1. Have one special food item to anchor the meal-  some ideas include: really fantastic Croissants, Slab Bacon from your local butcher, or, in today's case, some dense and delicious Date Nut Bread spread with Cream Cheese. For this I have to thank my mom, who took it upon herself to make and share this classic New York City cult favorite, Chock Full o'Nuts Date Nut Bread. The recipe we'll include below results in addictively delicious, moist slices of sweet, nutty goodness.

2. Break out the good stuff- For whatever reason, brunch always feels, at least to me, like it should be just a bit more luxurious than your average meal. Whether that means you use your good china, or skip the paper napkins in favor of cloth, do something that makes brunch feel extra special to you. 

3. Imbibe- A pretty cocktail will always help your brunch to stand out. Go with the classic Mimosa or Bloody Mary (my all time fave), or improvise with what you have on hand, as we did with our Pink Wine Spritzer made with equal parts Dry Rose and Seltzer, plus fresh Figs, a slice of Pear, and a few Frozen Raspberries. Refreshing!

4. Variety is the spice of life- To set brunch apart from other daytime meals, I like to include lots of little nibbles - they take almost no time to present, and having lots of options always seems to increase the enjoyment of the meal. Ideas include: some dried and fresh fruits, a handful of nuts, or two or more types of jam or compound butter. And don't forget the Biscotti. Nothing makes coffee more enjoyable than something crisp and sweet to dunk in it. 

5. Take your time- Brunch is a long and lazy meal. Enjoy it slowly and in good company. Take a rest, and go back for seconds. Brunch is definitely one of life's many pleasures worthy of savoring. 

Now as promised, here's the recipe for the most smashing Date Nut Bread. One loaf takes you a long way, as it is dense and very rich. It's also a wonderful idea for a hostess or holiday gift, that is if you can bear to part with it! Be sure to also read the story behind this iconic treat

Chock Full o' Nuts Date Nut Bread (and Cream Cheese Sandwiches)

Makes 1 loaf:
Ingredients:
1 cup pitted chopped dried dates
3/4 cup boiling water
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup walnuts, coarsely chopped
3 tablespoons butter, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla
8-oz package cream cheese, slightly softened
Method:
1. Preheat oven to 350°F and lightly grease a 9x5-inch metal loaf pan, set aside.
2. Add the dates to medium-sized, heat-safe bowl. Pour boiling water over top, stir and let stand 15 minutes. 
3. Meanwhile, stir together the flour, baking powder, salt, cinnamon, and nutmeg in a medium bowl. Add the nuts and set aside.
4. In a separate large bowl, cream together the butter and sugar until combined (mixture might look crumbly). Add eggs and vanilla and mix until smooth and combined.
5. Alternate between adding the flour mixture and the date mixture (including remaining water), 1/2 of each at a time, mixing until combined.
6. Pour batter into prepared pan and bake 45-55 minutes, until bread is almost completely baked, but a few crumbs still stick to a toothpick inserted into the loaf. The bread will continue cooking after it is removed from the oven, so be careful not to overbake.
Assemble the sandwiches:

7. Let bread cool for 10-15 minutes, then remove from pan and let cool fully on a rack. Once cooled, slice bread and serve as closed or open-faced sandwiches spread with a tablespoon or two of cream cheese

In Season: Apricots - DIY Apricot Butter

Fruit Butters are a great way to make use of overripe fruit. They're also a bit easier to make than jellies and jams. Today, we're using the stone fruit star of the season, the Apricot, as the base for a smooth and tangy fruit butter that is irresistible by itself on bread or crackers, or, better yet, alongside butter, cream cheese, ricotta, or even sinful mascarpone. (We admit to an Apricot obsession this summer - check out our recent Apricot Mint Sorbet).

We love our recipe all the more because it employs ingredients you'll find handy in your pantry (except for the fresh Apricots of course), and in just an hour and fifteen minutes' time, only a bit of which is spent actively cooking, you'll emerge from your kitchen with two cups of Apricot Butter that tastes just as good or better than anything you can find in a gourmet store. Enjoy it yourself or cool the mixture and spoon into a mason jar for a charmingly homemade hostess gift. Apricot Butter can be stored in the fridge for up to a week for a taste of summer anytime the mood strikes. 

Apricot Butter

Yield: 2 Cups 

Ingredients:
10 or 11 very ripe medium-sized Apricots, carefully pitted and halved
1 Cup Orange Juice
1/3 Cup Water
3/4 Cup Sugar
1/4 teaspoon Real Vanilla Extract
3 Tablespoons Lemon Juice
2 good pinches of Salt

Method:
1. Place all ingredients in a large saucepan and bring to a boil. Partially cover and over moderately-high heat, allow the mixture to to simmer. Stir occasionally and keep an eye on it for about 10 minutes. Apricots will become very soft.

2. Uncover the pot and and lower the flame tp just under medium. Continue to cook simmer, stirring every few minutes, until the mixture is very thick. About an hour. 

3. Scrape mixture into food processor or high powered blender (we used our Vitamix) and blend until quite smooth. Allow the mixture to cool fully before refrigerating in an airtight container. Apricot Butter will keep up to a week in the fridge.

Fast, Fabulous & Frozen - Apricot Mint Sorbet

Today's post is going to be really quick, just like this wonderfully refreshing sorbet for your high powered blender - coming to you just in time for the warm weather. If you're looking for a sweet, tart fix, why not whip up a frozen treat using beautiful in-season Apricots. Healthy though it may be, this dessert really delivers. The twist? Fresh Mint Leaves. so well with sweet stone fruit; the combo is really surprising and makes for a very complex yet subtle flavor profile. 


I created today's speedy Sorbet recipe quite by accident. I had some leftover Mint leaves from our recent Gnocchi with Peas & Spring Herbs that I didn't want to waste. Then a week or so later, my bunch of Apricots I'd been looking forward to eating were ripening at a faster pace than I could enjoy them. Whenever fruits and herbs are at their peak, it's a great idea to freeze them in order to minimize waste. So I pitted and sliced up my Apricots, and weeks before that, to preserve my mint, I had placed three or four leaves in the bottom of each compartment of an ice tray before covering with water. Fast forward to the present day, and in rummaging through my freezer, the thought occurred to me that these two ingredients might just work wonderfully together.

Mint Ice Cubes make a fun addition to summer drinks, and in this case they provide a great way to add both ice and Mint to your blended creations. 




To recap: Make Mint Ice Cubes using 3 or 4 leaves of Mint in each ice cube compartment, cover with water and freeze!








Fast Apricot Mint Sorbet 
Serves 2
4 Mint Ice Cubes (see note above /with about 12 leaves of mint, three leave in each cube)
2-3 very ripe Apricots, pitted, cut into small slices and then frozen
2 teaspoons Agave, Honey, or other sweetener if your choice
1 Tablespoon Water (only if needed to thin out the consistency)

~Blend in a high powered blender until very smooth, scoop out, and serve immediately!

All-American Starters - Southern Cheese Board: Pimiento Cheese, Candied Bourbon Pecans & Bacon Cheese Truffles

Hope y'all had a great Thanksgiving! Could you hear this Yankee saying that in my best Southern accent? We sure did, and as usual, we were treated to a great meal from start to finish. It's become custom for me to be in charge of holiday hors d'oeuvres, and this year was no different. It will also surprise nobody that I chose to present a cheese plate (I just love cheese), or that said cheese plate would be themed. What can I say, I like continuity. It's kind of how I roll

I'm still feeling inspired by our family's recent South Carolina culinary adventure, so the foods of the South have been on my mind. With Thanksgiving being the quintessential American holiday, it just made sense to showcase some treats inspired by the American South.

From classic Pimiento Cheese, to Candied Bourbon Pecans, to Bacon Covered Gorgonzola Truffles, I think I succeeded in hitting each sweet, savory and salty note that I'd aimed for. Was it a little rich? Oh yes, but each component to this year's Southern Cheese Selection can stand nicely on its own if you prefer. Feel free to pick and choose whether to make all the elements or just one or two. Side Note: sinfully delicious sweet and salty bourbon pecans make a great homemade holiday gift!

Elements For The Perfect Southern Cheese Plate:
Pimiento Cheese (Recipe Below) - served with celery and Ritz Crackers for dipping.
Sweet and Salty Candied Bourbon Pecans (Recipe Below) - scattered about for a sweet, crunchy counterpoint.
Gorgonzola Bacon Truffles* (Click HERE for Recipe) Gorgonzola isn't really southern but bacon sure is.
Assorted Fruits and Garnishes -Tart green grapes, super ripe Pears (which go wonderfully with the bacon truffles), apples and apple slices, celery tops (for decoration), and flat-leaf parsley for color.

Note* I attempted to adapt the Gorgonzola Bacon Truffle recipe using low-fat cream cheese and gorgonzola dolce which was not pre-packed/crumbled. It didn't work too well! My truffles weren't firm, even after chilling. The result was still delicious, so I decided to serve them on a cracker so that guests wouldn't have to attempt scrape them off the plate. Part of cooking is thinking on your feet!      

In short, I'd recommend following Southern Living's recipe to the letter, as I suspect my ingredient choices did not offer a dense enough in consistency to begin with. I also recommend chilling the mixture in the freezer before rolling out the truffle balls. 









Sweet and Salty Candied Bourbon Pecans

Yield: 4 Cups

Ingredients:
4 Cups Pecan Halves (we used Diamond brand)
1 stick Salted Butter (not margarine)
1 1/4 Cup Dark Brown Sugar
1 teaspoon high quality Cinnamon
1 teaspoon Salt
1/4 Cup Bourbon
1/4 - 1/2 teaspoon Cayenne Pepper (depending on how spicy you prefer)

Method:

1. Preheat the oven to 350. Lay pecans on a rimmed baking sheet and bake for 10 minutes  until fragrant. Move toasted pecans to a bowl and set aside.

2. In a large, heavy skillet (cast iron if possible), melt the butter over medium heat, stirring it as it melts or else it will brown. Add toasted pecans and stir to coat well. Next, add the brown sugar, salt and cinnamon. Turn down the flame just a touch and continue to stir constantly for a full 10 minutes. Do not leave the nuts unattended. The sugar will gradually liquify and candy the nuts.

3. Now, add the bourbon slowly and carefully as it could flame, then stir to combine for about 2 minutes. Sprinkle nuts with optional Cayenne if you choose. Remove skillet from the heat and pour pecans onto a baking sheet that has been lined with parchment paper. Spread them into a single layer as best you can. Allow to cool for 20 minutes and break up any clumps. Cool completely before serving or packaging.

NOTE: Pecans can be stored in an airtight container at room temperature for up to 1 week. 

Next up, the star of the show, everyone's favorite - Pimiento Cheese. For the uninitiated, pimiento cheese is a delightful blend of cheddar cheese, mayonnaise, and diced pimiento peppers. There are many variations from here, but I chose to adapt Andrew Knowlton's grandma's very straightforward recipe. A dash of worcestershire and some Tabasco made it my own. The result was a vaguely spicy but not overpowering and of course, it was gobbled up in no time flat. On the chance you have any leftover, toss it into macaroni for a quick mac 'n cheese, or spread on some toast for an improvised grilled cheese. The possibilities are endless

Classic Pimiento Cheese

Lightly Adapted from Andrew Knowlton/Bon Appetit
Yield - 3 Cups (enough for about 10 people) 

Ingredients: 
1 1/2 Cups (packed) Sharp Yellow Cheddar, finely grated
1 1/2 Cups (packed) White Cheddar, finely grated
1 Cup Low Fat Mayonnaise
1/3 Cup jarred Pimiento, drained and chopped
1/4 teaspoon Cayenne Pepper
1/2 teaspoon Worcestershire Sauce
2 dashes Tabasco Sauce (optional)
Salt and Pepper
Celery Sticks or Ritz Crackers to serve

Method: 
Mash all ingredients together and stir very well. Taste for seasonings. Add a few dashes of pepper and add  salt only if needed - the worcestershire should provide enough salinity. Chill until cold for at least 2 hours or up to 3 days. Serve with celery sticks and/or Ritz crackers. 

Bonus - check out my mom's beautifully presented spinach dip served in a cabbage! She uses the classic Knorr Recipe (don't skip the water chestnuts!). It's one of my favorites!
